Tasty peach preserves blend with sour cream to make these muffins moist and delicious. If you have some homemade peach preserves, by all means use it. Otherwise, store-bought will be okay. 2 cups all-purpose flour 1/4 cup sugar 1/4 cup firmly packed brown sugar 1 teaspoon baking soda 1/8 teaspoon salt 2 eggs 1/2 cup sour cream 1/2 cup peach preserves 1/3 cup vegetable oil Preheat the oven to 400 degree F. Grease a 12-cup muffin tin (1/3 cup capacity each). In a large bowl, combine the flour, sugar, brown sugar, bak- ing soda, and salt. Stir to mix. In a medium bowl, beat to- gether the eggs, sour cream, pre- serves, and oil. Add to the dry ingredients and stir only until the dry ingredients are moistened. Do not over mix. Fill the muffin cups about two thirds full. Bake for 20 to 25 minutes, or until a wooden pick inserted into the center of a muffin comes out clean. Remove muffins from pan immediately. Line a 9x13x2-inch bak- ing pan with aluminum foil. Butter generously. Combine the condensed milk, pecans, and coconut in a small bowl. Stir to mix. Pour into pan. Spread to cover bottom. Combine the cake mix, water, sour cream, whole egg, egg whites, and coconut extract. Beat until well mixed, 2 to 3 minutes. Pour into pan. Bake for about 35 minutes, or until a wooden pick inserted near the center of the cake comes out clean. Remove foil. Allow to cool before slicing.
