As a concerned citizen, I pay close attention to public health issues. I was particularly interested in the article appear- ing in the Detroit News on Feb- ruary 26, 1995, regarding bagel-related accidents. Bagel consumption has been a part of my family's traditions for generations. In light of the number of bagel-related acci- dents reported by the Detroit News, I feel compelled to share my family's secrets of safe bagel cutting. These techniques were taught to me by my Uncle Irving, who has sliced, and no doubt eat- en, more bagels than he cares to remember. Rotational Method: The bagel is held firmly in the palm of the left hand, pinching the bagel be- tween the thumb and fingers. The right hand holds the knife and gently makes a small inci- sion in the bagel using a gentle back and forth movement. Move- ment of the knife should be al- most imperceptible. Once a shallow groove has been created, begin rotating the bagel with the left hand in a counter-clockwise direction while the right hand gently moves the knife back and forth. The rotations continue, along with the slicing motion, un- til the bagel halves reach com- plete separation, usually after one full bagel rotation. The Half-Cut Method: As de- scribed in the rotational method, begin by holding the bagel in the left hand and making a small slice (entry groove) on the bagel's right side at approximately the 3 o'clock position. Slicing contin- ues with the gentle back and forth motion while the bagel is held firmly and stationary with the left hand. It is imperative that the bagel be gripped with a strong pinch- ing force in the event that the knife inadvertently begins to pass beyond the mid-point of the bagel. When the knife reaches the point that is equidistant from the bagel's perimeter, release the left hand so that the bagel is sus- pended on the knife, rotate the right wrist and forearm in a counter-clockwise direction so that the cutting edge of the knife is parallel and facing away from the body. Grab the bagel with the left hand at the point closest to your stomach, making sure you have a firm grip, and continue to cut through the bagel.
