SPERBER'S KOSHER CATERING

EMPHASIZING THE FRESH AND THE NEW
WITHOUT
SACRIFICING TRADITION

1 pound semisweet chocolate, chopped
1/4 cup (1/2 stick) butter or margarine
2 teaspoons instant coffee
1/3 cup water
2 large egg yolks
1/3 cup Kahlua
4 large egg whites, at room temperature
1/4 cup sugar
1 cup whipping cream

In top of double boiler, melt chocolate
and butter with the coffee and water and
stir until smooth. Remove from heat. In a
small bowl, mix egg yolks and kahlua. Grad-
ually whisk yolks into chocolate. Set aside
and cool to room temperature.
In a large mixing bowl with electric mix-
er, beat egg whites until soft peaks form.
Beat in sugar, 1 tablespoon at a time, until
firm but moist peaks form. Spoon over
chocolate, but do not mix in. In same mix-
ing bowl, beat cream until soft peaks form.
Fold chocolate and whites into cream un-
til incorporated.
Pour into a medium bowl or individual
serving dishes. Cover with plastic wrap and
refrigerate until firm, at least 4 hours. To
form balls, dip ice cream scoop into hot wa
ter and scoop out mousse. Makes 8 servings.

To make crust: Preheat oven to 325 de-
grees. In food processor, process pecans,
brown sugar and cinnamon until nuts are
finely ground. Add butter and process un-
til well combined. Press into bottom and
sides of a 9-inch tart pan with removable
bottom. Bake for 20 minutes or until gold-
en brown. Transfer to rack and cool to room
temperature.
To make filling: In medium saucepan
