Chocolate Frosting

8 ounces semisweet chocolate, chopped
2 tablespoons butter
2/3 cup whipping cream
5 teaspoons sugar
3 tablespoons B & B or brandy liqueur

To make frosting: In a large microwave-
safe bowl, microwave chocolate, butter,
cream and sugar uncovered on high (100
percent) until chocolate is melted, about 1 / 1 .
to 3 minutes, stirring every 60 seconds un-
til smooth. Stir in B & B. Place bowl in larg-
er bowl half-full of ice water and stir often
until thick enough to spread, about 15 to 25
minutes. Watch carefully or it will turn to
fudge and need to be remelted. Or, leave at
room temperature, stirring occasionally un-
til thick, about 1 to 2 hours.
To frost: Line a cake plate with strips of
waxed paper to catch the drippings. Place
semisweet cake layer on plate and spread
with scant 1/3 cup frosting. Top with white
chocolate layer. Spread with scant 1/3 cup
frosting. Top with milk chocolate layer.
Spread remaining frosting over top and
sides. If using chocolate triangles, arrange
as many as desired in a free-form pattern
over top and sides of cake, standing some
up and laying others flat, varying the colors.
Gently pull out waxed paper strips. (The
torte may be stored at room temperature
overnight.) Serve at room temperature.
Makes 12 servings.

Tri-color Chocolate Triangles

2 to 3 ounces white chocolate,
chopped or chips
2 to 3 ounces milk chocolate,
chopped or chips
2 to 3 ounces semisweet chocolate,
chopped or chips

Place each chocolate in a small microwave
bowl or measuring cup. Microwave uncov-
ered at 70 percent for 1 /2 to 4 minutes, stir-
ring after each minute until smooth; melting
times may vary with types of chocolate. Or,
melt on top of stove in double boiler.
Pour each chocolate onto a separate sheet
of heavy foil and spread into an even,
smooth layer about 1/4-inch thick. Cool at
room temperature until firm, but not brit-
tle. With a sharp knife, working right on the
foil, cut each into various size triangles, from
1- to 3-inches long. Remove from foil and
refrigerate in an airtight container. (The tri-
angles may be refrigerated in a covered con-
tainer for several weeks.)
