business is Jewish ...

I could close my doors."
The 1991 fire never
dampened his spirts ...
The urge to open again
was great ... even
though all his kitchen
equipment except a
coveted rotisserie bar-
b-q machine was ru-
ined and had to be
replaced.
Chic-N Ribs was closed five
months for remodeling and his
determination paid off as he
opened again with some of the
employees who worked there be-
fore the blaze.
It is much to Miles' credit that
all but one of his 25 employees re-
turned ... Some had held other
jobs and others just bided time
"vacationing" until Miles would
again open, which they knew he
would.
They enjoy working for this
man ... applaud his clean habits
... and enjoy cooking and serving
Miles' style of food because of a
seven-letter word by which cre-
