The wine cellar, by the way, is a reason why Pike Street restau- rant has been honored the past four years by Wine Spectator magazine ... It has an inventory of about 2,000 bottles of wine with 260 different brands. In the main dining room with its huge walls, brown print cloth padded booths, servers are all in tuxedo garb, full or without jack- et ... The relaxed atmosphere of this excellent restaurant has the look of the '30s and '40s, with framed wall hangings, white linen tablecloths and white linen napkins. Everything is made from scratch at Pike Street restaurant; nothing bought pre-packaged ... Soups and sauces are made only from natural stock ... natural chicken or veal reductions ... Anything made by Derin and his staff is done by them on the site at Pike Street ... no outside pur- chasing ... It does its own butchering, and smokes the fish it prepares. Since opening 11 years ago, two waitpersons, Ann Oliver and Pike Street has been on top for 11 years. Moore is a culinary student or graduate ... They come from Culinary Insti- tute of America, Oakland Com- munity College and Schoolcraft College ... Since Derin has such an investment with the offering of his knowledge, each must as- sure him that they will be with Derin for awhile. Plus being a member of Team USA of the Culinary Olympics, he is a member of the American Culinary Federation, Michigan Chefs du Cuisine, and winner of a gold medal, six silver medals and a bronze medal in stiff local competition which, we may boast, has some of the best chefs in America. Pike Street restaurant is proud of its lofty perch in the world of culinary excellence. Having people like Nino and Derin has presented a further en- hancement of this pride.
