Under the staircase that leads
up to some shops, Craig has in-
geniously built a glass-enclosure
for guests to see his area of filled
wine racks ... Ocean Grille's fine
collection has about 100 brands
and almost 4,000 bottles ... Wine
by the glass is a dominant seller,
with a selection of 15 from which
to choose.
Craig is a fanatic on fresh cof-
fee ... He uses only whole bean
Columbian coffee, full-bodied,
with beans ground at Ocean
Grille ... The decaffeinated is
chemical-free.
A true seafood house will also
have dishes for folks who desire
something else ... Ocean Grille
sells a lot of pasta ... Linguine
with clams, tossed in olive oil,
garlic, tomatoes and parmesan
cheese, $10.95; shrimp fettucci-
ni tossed in cream, tomato con-
casse and basil, $13.95; pasta
primavera of fresh vegetables,
fettuccini, parmesan cheese and
walnuts, $8.95; etc.
Chicken is big, too, at Ocean
Grille, which goes through about
100 pounds a week ... Sliced
chargrilled breast over fettucci-
ni with bell peppers, cream and
asiago cheese, $12.95, is a big sell-
er; also the rotisserie chicken half
with cranberry relish, $10.95.
Herb-encrusted rack of lamb

is a heavy favorite, roasted with
a Dijon mustard, $18.50 Also
Craig's filet and New York strip
sirloin, both with roasted garlic,
arborio rice cake and onion frits,
each $17.95.
Craig and Bobbie Dilworth
have an excellent operation in
Ocean Grille, with so much em-
phasis on freshness and cleanli-
ness ... He is always there ...
Bobbie is daily at lunch and
evenings on weekends, working
the floor with Craig and helping
him run the restaurant.
The dietary restrictions of cus-
tomers is very keenly adhered to
... No such thing as "certainly we
will" and it not being done ... This
to Craig is one fast way of an em-
ployee out the door.
There is much to be said about
a good true seafood restaurant ...
Not many survive because it is
probably one of the toughest
types of restaurant operations to
run ... The margin for error is
very slim ... a customer's good
health may depend on the fresh-
ness of fish, and its preparation
in clean surroundings.
Confidence ... trust ... they are
all-important words in the selec-
tion of a seafood restaurant ...
Fresh fish is Craig Dilworth's
calling card ... Add this to these
two very important words and
you have Ocean Grille ... a truly
prize catch.

YOU'VE HEARD about the
guy who didn't like the service so
he went out and bought the
restaurant ... Edith Kaufman
went to see Miss Saigon, couldn't
buy a sweatshirt, so began sell-
ing them at her store, the Poster
Gallery, in the Fisher Building,
across from the Fisher Theatre
... Things went so well that she
decided to stock up on shirts from
other Broadway hits like Phan-
torn of The Opera, Les Miserables,
Cats and Crazy For You.
DISA N' DATA ... Folks like
Betty and Al Rubin love the veg-
etarian egg white omelettes at
Sunrise Cafe on Beck and North-
western ... That non-fat yogurt
sold at Hudson's is made by Al
Loewenstein's Frosty Yogurt
company in Troy ... Mike Albert
is crowing these days ... The ban-
quet room at his Alberts Ham-
burgers on Grand River between
Lahser and Six Mile has grown
to a whopping 10 ... Mike's ham-
burgers are among the best
around but don't sell his chicken
breast sandwich short ... and
those wooden nickles he gives out
are worth something ... a cup of
coffee at his place ... Ever had the
spaghetti with salmon at Gior-
gio's on Greenfield and Lincoln?
... Small wonder that it is such a
big seller ... A lot of folks will be
happy to know that he will soon
open a second spot ... almost ex-
actly like his present very suc-
cessful gourmet diner ... It will
be in the northwest area. CI
