Bobbie is daily at lunch and evenings on weekends, working the floor with Craig and helping him run the restaurant. The dietary restrictions of cus- tomers is very keenly adhered to ... No such thing as "certainly we will" and it not being done ... This to Craig is one fast way of an em- ployee out the door. There is much to be said about a good true seafood restaurant ... Not many survive because it is probably one of the toughest types of restaurant operations to run ... The margin for error is very slim ... a customer's good health may depend on the fresh- ness of fish, and its preparation in clean surroundings. Confidence ... trust ... they are all-important words in the selec- tion of a seafood restaurant ... Fresh fish is Craig Dilworth's calling card ...
