et's face it; we've run out
of time to do all the shop-
ping that we need to do for
Chanukah. We really need
to get creative if we want to avoid
those crowded malls.
The gifts I'm about to suggest
are really for the over-21 crowd.
You're on your own for the chil-
dren.
Number one on my list is a gift
membership to the Kosher Club.
This organization offers dis-
counts on travel, food and ac-
commodations throughout the
United States and Canada.
Along with your membership,
you receive travel guide books
and listings of kosher restau-
rants. They can also make
arrangements for you to receive
kosher meals anywhere in the
United States or Canada. Call 1-
800-3-KOSHER for information.
Number two is a beautiful
wine carrier with a selection of
kosher wines from your local
liquor shop. There is an incred-
ible selection this year and some
unbelievable new varieties out.
As always, they seem to be priced
low enough so that if you want
to get a few bottles for yourself
you won't break the bank. My fa-
vorite of the month is the Kess-
er Niagra Blac. It's a little sweet
but very smooth. Add a little
chocolate candy and it's a perfect
gift.
Moving right along, number
three is the gift of a "special" day.
A day of beauty at a local salon,
a visit from a house cleaning ser-
vice, a lesson from a pro in a fa-
vorite sport or even a day off
where one spouse assumes all
the responsibility of the mate.
This "free" day is one of my fa-
vorite presents.
Number four is an evening
out. Dinner and a show (I am not
talking about a movie here) are
guaranteed to bring out the
smiles. Get some fancy paper,
have everything written out in
calligraphy and present it rolled
up and tied with a ribbon.
And finally, number five on
my hit parade is caviar and all
the stuff. At a recent kosher food
fair in Chicago, I discovered a
fabulous new line of kosher
caviar (certified by CRC) that's
available through mail order. It's
called Carolyn Collins caviar.
While I don't usually endorse
products, this one is so great I
just had to pass the information
along. I'm including some of the
recipes that Carolyn sends along
with her products. This compa-
ny is really a class act (to order
call 312-226-0342 or fax 312-226-
2114; you must ask for the
kosher caviar as not all the caviar
they produce is certified).
When all is said and done and
the gifts are all exchanged, aren't
you secretly glad that we only
have to do this once a year?
SMOKED SALMON
ROLL UPS
Using pre-sliced smoked
salmon, carefully separate the
slices and spread each with 112 t.
of Absolut pepper and/or citrus
caviar. Roll up the salmon and
cut round slices. Place each
round on a low-salt wafer and
garnish with a spring of fresh
cilantro and or dill. A few alfalfa
sprouts on top of this is also nice.

GARDEN FRESH
CAVIAR CRUDITE
Prepare a variety of seasonal
fresh vegetables: large white
mushroom caps, zucchini, lemon
squash or cucumbers sliced into
thin rounds, cherry tomatoes
(slightly scoop the centers), boiled
new potatoes thickly sliced and
chilled, celery stalks cut into bite
sized pieces. Top off the well
chilled vegetables with the nat-
ural white fish or lemon caviar
and serve.
CAVIAR SALSA
2 large tomatoes, minced
4 to 6 scallions, chopped,
including the green
1 small sweet onion minced
cilantro to taste
1J2 to 1 t. minced garlic
1 jar Absolut pepper caviar
Mix all ingredients together
and serve with corn chips.
CHILLY MEXICAN RICE
1 recipe caviar salsa
6 servings cooked and chilled
white rice
1/4 lb. smoked salmon, shredded
1 jar Absolut citrus caviar
cilantro
Toss the rice and caviar sal-
sa together. Add the smoked
salmon and top with caviar. Dec-
orate with cilantro. E
