• Always store coffee in an air-
tight container and keep in a cool,
dark place. Coffee that is not go-
ing to be consumed within two
weeks should be placed in an air-
tight container and stored in the
freezer.
• Use the correct grind for your
coffee maker. Too fine a grind will
cause bitterness or clog your
brewer. Too coarse a grind will
cause coffee to be watery.
• The ideal chemistry for a cup
of coffee is 18 percent to 22 per-
cent solubles. This translates to
2 rounded tablespoons of coffee
for each 6 ounces of water.
• Whole-bean coffee retains its
flavor much longer than ground
coffee. If freshness is important
to you, consider investing in a
home coffee grinder. ❑

The Art of Play: Antique Toys
from the Collections of Artists be-
gan Nov. 11 at the Creative Arts
Center in Pontiac. Local artist,
Ted Lee Hadfield, curated this
exhibition using unique materi-
al from his personal collection
along with the collections of oth-
er Michigan artists. This nostal-
gic exhibit lasts through Dec. 22.
The Creative Arts Center an-
nual gift show takes place

tures hand-made art, crafts and
