2 minutes. Add vanilla to choco-
late mixture. Pour chocolate
mixture into egg mixture while
beating at low speed. Fold in
dry ingredients, then fold in
white chocolate.
Spoon heaping tablespoons
of batter onto prepared cookie
sheets, about 1-inch apart. Bake
12-14 minutes. Cookies will be
dry on outside and soft inside.
Cool before removing from pan.
Makes about 4 dozen.

BUTTERMILK
PANCAKES
1 cup yellow cornmeal
1 /2 cup brown rice flour
1 /2 cup Perky's Nutty Rice
Cereal
1 teaspoon salt
1 tablespoon sugar
1 /2 teaspoon baking soda
11/2 cups buttermilk
3 tablespoons melted
margarine or butter

1 beaten egg
1 /2 teaspoon gluten-free
vanilla
Mix together cornmeal, rice
flour, Nutty Rice Cereal, salt,
sugar and baking soda. Com-
bine buttermilk, margarine, egg
and vanilla.
Blend two mixtures and mix
just until dry ingredients are -/

moistened. Let sit 5 minutes.
Cook on a hot, greased griddle.
Makes about 2 dozen 3-inch
pancakes.

Preheat oven to 350 degrees.
Beat: 2 sticks unsalted but-
ter, softened
Add and beat: 4 eggs, lightly
beaten and 2 teaspoons gluten-
free vanilla powder or extract
Fold in: 1 bag Sugar Cookie
and Cake Mix (from Gluten-free
Pantry, Inc.), 2 cups light sour
cream(check label), and 1 ,12 14 cup
frozen blueberries, unthawed.
Spoon into well greased
bundt pan and bake 55 min-
utes. Cool 10 minutes, then turn f--/
onto wire rack and dust with
powdered sugar.
Cool completely. Serves 12.
