Green Mold

When one crate of grapefruit is
a healthy yellow and another is
smudged with green mold, there's
no blaming the random hand of
Dracula. The fungus is one of the
nastiest diseases attacking per-
fect fruit after the harvest. It can
ruin a shipment of fruit on its way
to market, costing producers hun-
dreds of thousands of dollars,
Now scientists in Israel and the
United States have discovered a
naturally occurring yeast that can
fight insidious pathogens and
avoid the use of chemical fungi-
cides.
The yeast, Candida olephila,
is quite different from the famil-
iar yeast used in baking bread
and cakes. It appears naturally
on the peels of some fruits and
vegetables. Using it to combat
post-harvest rotting was an idea
conceived by Dr. Charles wilson
at the United States Department
of Agriculture station in Kear-
neysville, WV, and Dr. Edo Cha-
lutz at the Volcani Agricultural
Research Center in Beit Dagan,
Israel.
"You need 95 to 99 percent con-
trol into the post-harvest arena,"
said Dr. Chalutz. "And safety is
considered of the highest impor-
tance in a product en route to the
consumer." Naturally occurring
yeast satisfies all the require-
ments for a commercial product.
Resistant to high and low tem-
peratures and humidity, not fussy
about environmental conditions
generally, or nutrient require-
ments, Candida oleophila is a re-
sistant biofungicide. Combined
with a low concentration of chem-
ical fungicide, it is an effective in-
tegrated control measure.
How does the yeast work? As
an antagonist, it competes with
the pathogen for space and nu-
trients at a wound site. After the
pathogen is conquered, when the
threat is averted, the wound heals
