Arrange the pear quarters in a circle in a round ovenproof dish, laving some space in between each piece. Place 1 or 2 orange slices between the pear quarters. Arrange the ba- nana slices in the center of the dish. Sprinkle the fruit with the almonds. In a bowl, beat togeth- er the egg yolks, cream and sug- ar. Add the brandy and beat again. Pour the mixture over the fruit and broil until golden brown. Sprinkle the confectioners sug- ar on top; and serve hot. CHICKEN SAUTE WITH PEANUTS 3 T. vegetable oil 1-1/2 lb. chicken, cut up into serving pieces 1 onion, chopped 3 garlic cloves chopped 2 large eggplants, cut into large cubes 1 T. flour 2 c. chicken stock 1 c. dry white wine 114 lb. shelled, unsalted peanuts 2 bay leaves 1/2 t. thyme 1/3 t. cayenne pepper salt ground pepper In a large saucepan saute chicken in vegetable oil. Brown on all sides. Add the onions, gar- lic and eggplant and saute for 3 minutes. Sprinkle with the flour and mix well. Add the chicken stock and the wine. Bring to a boil then reduce the heat to medium. Add the peanuts, bay leaves, thyme, cayenne pepper and the salt and black pepper to taste. Cook covered for 45 minutes or until chicken is tender. Remove the chicken pieces from the saucepan and place them on a serving platter. Raise the heat and cook the sauce until it is re- duced to about 1 cup. Remove the bay leaves and pour the sauce over the chicken and serve.
