Besides challah and light and dark bread, Mr. Bollag's bakers make pita bread, farfel, egg cook- ies, birthday cakes , Black Forest cakes, strudel, schnecken and varied Swiss specialties. A native of Lugano, in the south of Switzerland, Mr. Bollag was the manager of a kosher ho- tel in his home town for 20 years. Then, in 1981, he had the op- portunity to buy a kosher bakery in Zurich. "And I was terribly hes- itant because a kosher business is very demanding," he says. But encouraged by his wife and moth- er, he decided to go ahead. "The business was very run down at that time. There had been four owners in 10 years," relates Mr. Bollag. " And it took me one year of working 18 hour days to bring it up to standards and to re- gain the confidence of the clientele." Those standards are very ex- acting; the bakery is supervised by Rabbi Daniel Levy of Zurich's Orthodox community. "It meets the highest kashrut standards." says Mr. Bollag. "It's very strict supervision." Although the products are strictly kosher, a full 15 percent of his customers are not Jewish. "A Christian customer has 100 other alternatives to choose from, so when they choose us, that's a source of great pride." Most of his clients, of course, are Jewish. They range from Re- form Jews to Orthodox. Fridays are particularly busy; that's when customers line up for the home- made challah. He's also deluged with orders for any Jewish holi- day. Business also gets hectic when there are special Jewish events; for instance, this past No- vember, there was a gala cele- bration marking the 100th anniversary of the Swiss B'nai B'rith, and Mr. Bollag provided all the pastries for 600 guests. Wearing his kipah, dashing from his office to the bakers Mr. Bollag has his hand in every aspect of the busi- ness. He confesses readily that he doesn't do any baking. But he still goes out in search for inter- esting recipes, just as he did when he first bought the busi- ness. "Whenever I travel, I look for recipes," he says, as we come • back upstairs. • He's as busy as he ever was in the kosher hotel business. But Mr. Bollag's not complaining.
