SWEET POTATO SPICE COOKIES 2 1/2 c. all purpose flour 1 C. mashed sweet potatoes 1/3 c. butter or margarine, softened 1/4 c. molasses 1/4 c. maple syrup 2 t. baking soda 1 t. ground cinnamon 1 t. ground ginger 1 egg 3/4 c. sugar In a large bowl with an electric mixer at low speed, combine the flour, sweet potatoes, butter, mo- lasses, maple syrup, baking soda, cinnamon, ginger, egg and 1/2 cup sugar. Pre-heat oven to 350 degrees. Place the remaining 1/4 cup sugar in a small bowl. Shape the dough, 2 tablespoons at a time, into balls; roll the balls in the sugar. Place the balls on large ungreased cookie sheets, about 1 1/2 inches apart. Press each ball to 1/2-inch thickness. Bake 15 minutes, or until browned. Re- move from the oven and cool on a rack.
