Showing no false modesty, Mr. Yerovoam divided the history of Israel wine making into three pe- riods: the ancient period, begin- ning with the biblical era and extending through Moslem rule; the "first revolution," marked by the replanting of vineyards in 1887; and the "second revolution," the establishment of the Ramat Hagolan Winery in 1983. In that year, Mr. Yerovoam pointed out, the overwhelming majority of grapes growing in Is- rael were either table grapes or those of the Alicante variety, which are used for the most un- sophisticated wines. The only two upgrade varieties being grown were Cabernet and Sauvignon, and even these were only a tiny percentage of the har- vest. Today, he said, there were more wineries, more competition, and more types of grapes, such as Merlot, Pinot Noir and Chardon- nay. Israeli wineries have learned from experts from California, France and — more recently — the former Soviet Union. The so-called "New World Wines" are coming to the fore. All the wineries are selling a better product, with improved quality, variety and packaging. At the same time, Mr. Yerovoam said, wine prices in Israel are go- ing down and will, he predicted, continue to decline. "I don't think we'll be losing money, but we'll have to become more efficient," he said. Mr. Cohen reported that Is- raelis can expect even more vari- eties of wines in the future. Grapes such as true Riesling (as distinct from the Emerald Ries- ling common in Israel today), Nebiolo (from which the famed Italian Barolo wines are made), and Zinfandel were all thought to be too delicate for Israel's hot sun. Today, Mr. Cohen said, as a re- sult of genetic cloning, it is possi- ble to find strains of these varieties which can grow in spe- cific micro-climates in Israel. Mr. Cohen predicted that in the coming years, the wine industry will be paying more and more at- tention to the health benefits de- rived from wine drinking. He cited statistics which showed that nations that drank more wine showed lower inci- dence of death due to coronary heart disease, a phenomenon which has been attributed to the antioxidizing elements present in wine, especially red wine.
