SWEET MAPLE
ROASTED YAMS

2 small yams
olive oil or vegetable oil
2 tablespoons maple syrup
ground ginger to sprinkle
Scrub yams. Pierce each 3-4
times with sharp knife. Wrap
in paper towels. Cook in mi-
crowave at High for 6-8 minutes
or until tender. Let stand at
room temperature for 2-3 min-
utes to cool. Unwrap and cut
each yam in half, lengthwise.
Place on broiler pan, cut side up.
Brush with olive oil and drizzle
with maple syrup. Sprinkle
lightly with ginger. Place under
preheated broiler until bubbly
and brown at edges, 3-4 min-
utes. Serve hot.

COMPOSED MESCLUN
MANGO SALAD

4-6 oz mixed baby greens
(about 4 cups)
1 mango, peeled and seed
removed
1 tablespoon lime juice
Divide greens equally onto
two salad plates. Slice mango
and arrange half in fan fashion
on top of each plate of greens.
Brush with lime juice. Serve
with prepared dressing of your
choice.

DECADENT RASPBERRY
"QUICHE"

2 small macaroon cookies,
about 1-inch diameter
2 tablespoons Sabra or
other flavored liqueur
2 oz white chocolate,
coarsely chopped
4 individual meringue
shells
1/2 cup fresh raspberries
2 oz semisweet chocolate,
melted (optional)
1/2 cup heavy cream,
whipped (optional)
Crumble macaroon cookies
into cup and pour Sabra over.
Place quarter of the chopped
white chocolate into bottom of
each meringue shell. Top with
quarter of the Sabra soaked
macaroons. Sprinkle with rasp-
berries. If desired, drizzle with
melted semisweet chocolate.
Garnish with a dollop of
whipped cream. Two serv-
ings. ❑
