quirements of kashrut by mak-
ing substitutions when neces-
sary. For instance, since the
restaurant serves meat, not
dairy, his creamy desserts had
to be changed.
"We use a great dessert that
looks like a blintze, but it's Mex-
ican style — and we took non-
dairy cream and some lemon
juice and brandy, and it turned
out to be just as creamy as a
milk dessert," says Ms. Bryk-
man.
Then, too, in preparation for
the opening, special workshops
on kosher cooking were con-
ducted for the waiters and staff.
The chief rabbi from Mexico
City even to the hotel to give one
of the workshops.
Meanwhile, the chef worked
on the recipes; and by the time
the restaurant opened, it offered
a wide assortment of dishes,
many of them Mexican special-
ties. For instance, appetizers in-
clude cerviche Acapulquno, a
typical dish of Mexico's Pacific
Coast, which is made of mari-
nated fish, onions, tomatoes,
peppers and green chilies.
Seafood entrees include the pop-
ular grilled snapper garlic.
But those hungry for tradi-
tional deli fare can enjoy
chopped chicken liver or jumbo
sandwiches of pastrami or
corned beef. (All the meat is
flown in from Mexico City, and
the kosher wines are from Is-
rael.)
Whether spicy Mexican dish-
es or New York style deli, pa-
trons enjoy their food in an
appealing 650 seat outdoor
restaurant located in the upper
pool area and surrounded by
bougainvilles and other tropi-
cal flowers.
Although things got quiet
hectic just before the opening,
the Garden Deli opened on
schedule on Dec. 15, 1992, just
in time for the tourist season.
