steamed for 7 to 10

6 egg whites
1 onion, chopped
2 cups soy or rice milk*
2 12-ounce packages
whole-wheat noodles
Sesame seeds

Prepare noodles according to
package directions and drain.
Combine all ingredients in a 9
x 13 inch pan. Sprinkle top with
sesame seeds. Bake at 350 de-
grees for 45 minutes or until
lightly browned.
* Skim milk may be used if
serving a dairy meal.

Mix all ingredients together.
Refrigerate overnight. Serve.

CARROT CAKE

3 eggs, separated
1 /4 cup applesauce
'/4 cup canola oil
12 cup sugar
1 teaspoon lemon juice
1 cup grated raw carrots
1 cup flour
2 teaspoons baking
powder

Beat egg yolks and sugar to-
gether. Add oil, applesauce and
lemon juice. Beat until smooth.
Add carrots, gradually blend in
flour and baking powder. Beat
egg whites until stiff. Fold into
mixture. Bake in tin coated
with non-stick vegetable spray
at 350 degrees for 30-35 min-
utes.

VINAIGRETrE
1 medium head cabbage,
shredded
1 pound carrots, shredded
1 medium onion, sliced
fine
'12 cup sugar
1 cup reduced fat
vinaigrette dressing
1 teaspoon celery seed

HAMANTASCHEN

Dough:
212 cups sifted flour
3 /4 cup vegetable oil
6 egg whites
3 tablespoons white
distilled vinegar
3 tablespoons cold water
Filling:
1 can poppy seed filling
2 teaspoons cinnamon
Glaze:
2 egg whites beaten with 2
tablespoons water

Combine l'h cups flour with
oil and set aside. Beat egg
whites; add vinegar and water;
add 1 cup flour, sifting into egg
mixture while mixing lightly.
Combine mixtures and blend
well with a fork. Store in re-
frigerator, covered, overnight.
Take part of dough and roll
out on a lightly floured surface
or wax paper. Use cookie cutter
to cut desired size. Place 1 - 2
tablespoons filling in center.
Pinch sides together very well
forming a closed triangle over
filling. Brush glaze over dough.
Place on baking sheet. Bake at
400 degrees for 20 minutes or
until browned. Alternate fillings
may include cherry, blueberry
or any fruit. Li
