MOROCCAN SUGAR COOKIES 1 c. vegetable oil or butter 1 c. sugar 3 c. flour '/3 c. finely ground walnuts or almonds 1 /2 t. cirmamon powdered sugar Preheat oven to 350 degrees. Mix sugar and oil together in a large bowl. Gradually add the flour 1 cup at a time mixing well. Blend in the nuts and cin- namon. When the dough feels smooth, pinch off pieces of the dough large enough to roll into 1'12-inch balls. Place the cookie onto a floured cookie sheet and flatten slightly. Bake 35 to 45 minutes. Do not let the cookies get brown, they should remain off-white. Remove from cookie sheet, cool on a rack and sprin- kle with powdered sugar. Makes about 30 cookies. I discovered that you should eat turkey. Since the turkey is supposed to be the stupidest an- imal on the planet, it's eaten to remind of Ahasuerus. Since Purim is the last festival before Passover, we're also supposed to use up all of our flour by bak- ing all kinds of sweet treats us- ing the fruits we reintroduced to our diet at Tu B'Shevat. So grab a greger oops I mean spoon, and get cooking. 3 T. vegetable oil 3 egg yolks juice of 1 orange grated rinds of 1 orange and 1 lemon 4 c. sifted flour 3 oz. chocolate chips 1 /2 c. sugar 2 oz. candied orange peel extra orange juice Pre-heat oven to 400 degrees. Mix the oil, egg yolks, orange juice and grated rind together. Add the flour to make a dough. Roll out and sprinkle remain- ing ingredients into the center of the dough. Roll the dough up jelly roll style, making sure the log is tightly rolled. Cut into slices about 1/2-inch thick and place them on a greased cookie sheet. Bake 10 to 12 minutes, basting once with orange juice after about 6 minutes. Eileen Goltz ©1994
