Rehovot, Israel — A major
nutritional drawback of many
crop plants — including
grains, potatoes and legumes
— is their low content of
lysine and several other
essential amino acids. One
reason for this shortage is
that production of these
amino acids is greatly in-
hibited once they begin to ac-
cumulate. Using potato and
tobacco plants as experimen-
tal models, an Israeli resear-
cher, Dr. Gad Galifli from the
Weizrnann Institute, has now
found a new way to overcome
this problem.
Since one of the enzymes
that synthesize lysine in
plants, dihydrodipicol inate
synthase (DHPS), is readily
deactivated by amino acid ac-
cumulation, Dr. Galili turned
to the DHPS in E. coli
bacteria, which is far less sen-
sitive to lysine build-up. He
extracted DNA segments
coding for the bacterial
DHPS, engineered them to

Potatoes richer in
essential amino
acids would help
alleviate
malnutrition in
poor regions.

_ In both of these species, lysine
levels manufactured by the
genetically engineered en-
zyme proved to be significant-
ly higher than those produced
by the natural variety. Ibbac-
co plants exhibited up to a
15-fold increase in free lysine,
while free lysine in potato
plants increased fourfold in
the leaves, fivefold in the
roots and threefold in the
tubers.
Human proteins contain
about 20. different kinds of
amino acids, the basic
building blocks of all protein.
However, 10 of these — the
"essential" amino acids —
cannot be synthesized by the
body and must be provided
ready-made via the diet.
Malnutrition, especially
among children, is prevalent
in many poor parts of the
world where the standard diet
contains insufficient quan-
tities of these vital com-
pounds, and cultivable
potatoes richer in essential
amino acids would help
alleviate this situation.
