Food JEWISH NEWS I have one very vivid memory of Tu B'Shevat from child- hood. It was the annual JNF tree drive, and I had saved and saved to buy a tree in mem- ory of my grandmother. I raced home from Sunday school to show the certificate to my par- ents. Classic case of good news and bad news. The good news was that they were very proud that I thought of my grand- mother. The bad news was I'd have to have the certificate reis- sued as my very much alive grandmother might take ex- ception to having something dedicated to her memory. Tu B'Shevat is a "new year's party" for trees. Celebrating the rising of the sap and the antici- pation of the first fruits and nuts of the season is a little dif- ficult when ifs been below freez- ing and snowing for the last few days. I try, however, to get in the mood by singing that old time favorite "Here we go with spade and hoe." rve been asked to host a Tu B'Shevat seder and my first thought was "If I have to clean this house from top to bottom and change my pots and pans and dishes more than once a year rm going to have a nervous breakdown." I'd never heard of a Tu B'Shevat seder before, and I'll admit, I was curious. ATTENTION!!!! This seder does not require massive amounts of housekeeping. A. typical modern day Tu B'She- vat seder is based on an ancient kabbalistic manual called P'ri Etz Hadar (Fruit of the Goodly Tree) as well as passages from the Talmud and other works re- lating to fruits, nuts and spring. You should serve at least four different types of wine or fruit juice at the seder and between 15 to 30 different types of fruit (fresh, dried, or canned) and nuts. There is no particular cuisine for Tu B'Shevat, so, of course, I made it my business to find recipes that used the fruits and nuts that I like the best. So .. . Have a "peachy" time with this bunch of recipes. BUTTERED RUM PINEAPPLE c. finely chopped macadamia nuts 1 large pineapple c. melted butter or mar- garine `/2 c. honey 1 /4 c. rum non-stick vegetable oil spray vanilla ice cream or parve "ice cream" Spread nuts on baking sheet and bake at 400 until golden. (Approx. 4 to 5 min.) Set aside. Set oven to broil. Pare and cut pineapple crosswise into 8 1-inch thick slices. Score edges. In a saucepan, over medium heat, stir butter/margarine with the honey and rum. Remove from heat and with a fork clip each piece of pineapple into the mixture, make sure both sides are coated and then drain off excess. Place pineapple on coated broiler rack and broil slices until lightly browned on each side. When slices are cool enough to handle, coat edges with ground nuts. Place the pineapple slices on serving plates, top with ice cream. Pour remaining sauce and nuts over the top. Serves 8. PEACHY POCKETS 2 c. torn bibb lettuce 2 fresh peaches cut up or 1 can cut up peaches 1 /3 c. sliced celery c. honey lemon dressing 3 pitas cut in half In a medium bowl combine lettuce, peaches and celery. Toss with 1/2 the dressing. Fill each pita half with 1/2 c. salad mix- ture. Serve with remaining dressing. Serves 6. (Dressing: 1 /4 c. lemon juice, 2 T. oil, 2 T. honey, combine and mix well.) WHITE GRAPE SPRITZER 5 c. ice cubes 1 can (6 oz.) frozen apple juice concentrate, thawed lemon and lime slices 1 bottle (1.5 liter) sparkling white grape juice, chilled 1 bottle (1 liter) club soda, chilled In a 4 qt. pitcher combine 1 c. ice cubes, the apple juice and lemon and lime slices. Add the sparkling grape juice and club soda. Stir to blend the juices. Place remaining ice cubes in 8 glasses and divide the spritzer evenly between the glasses. Serves 8. ® Eileen.
