products last year.
The industry aims to make
concern over dairy products a
big business. While the experts
are unhappy with industry
"scare tactics" which, they con-
tend, inflate the number of
"complete" lactose intolerants
(people who can't tolerate any
dairy products at all), they also
acknowledge the importance of
these special products. No one
wants people with lactose in-
tolerance to give up dairy prod-
ucts entirely.
Besides supplying protein
and vitamins, dairy foods pro-
vide about 75 percent of the cal-
cium in the American diet.
Calcium is especially important
for women during pregnancy
and lactation and after
menopause, when the risk for
developing osteoporosis in-
creases.
Approximately 70 percent of
people with hereditary-caused
lactose intolerance respond to
a lactose-reduced diet. Fortu-
nately for them, said Dr. Per-
man of Johns Hopkins, "it's not
a case of all or nothing when it
comes to dairy products. Some
people develop all the symp-
toms with very little milk while
others need to drink two glass-
es of milk before feeling any dis-
comfort."
In addition, lactose intoler-
ant people should include in
their diet the many dark green
and leafy vegetables, like broc-
coli and kale, that are high in
calcium.
