hanukah traditionally
means eight nights of can-
dles, gift-giving and lots of
favorite foods. Chanukah
has always been my favorite Jew-
ish holiday. Especially now since
I share the tradition with my hus-
band and our children.
The most memorable parties
were spent with my family at my
grandmother's house. Of course,
as a child my eyes lit up at the
sight of the gifts. I can still re-
member the piles and piles of the
freshly fried latkes, the giant
bowls of applesauce and sour
cream and lots of gold-wrapped
chocolate coins, otherwise known
as Chanukah gelt. As I walked
through my grandmother's front
door glorious aromas filled the air,
I knew it was going to be a great
day.
Some of us are lucky enough
to have our grandmother's or
even our great-grandmother's fa-
vorite recipes. Although I am
sure every family has its favorite
latke recipe, try experimenting
by adding a grated vegetable,
shredded leftovers, chopped dried
fruits and a favorite spice.
One cold day last December I
was in my kitchen experiment-
ing, as I usually do an hour or so
before dinner. It was the sixth
night of Chanukah, and my fridge
was overflowing with potatoes,
bean sprouts and leftover lox from
the preceding Sunday brunch.
I gathered up the fresh spuds,
some green onions, the lox and
sprouts and went to work. In 15
minutes we had diner: a latke
with flavors of the Orient. I knew
my husband would love my con-
coction. I think your family will,
too, as well as the vegetable and
apple pancakes. My signature
applesauce recipes are delicious
with plain potato pancakes as
well as for a fat-free dessert
throughout the year.

There are many varieties of
potatoes to choose from. My pref-

erence is for the white potatoes;
there is no need to peel them, and
they do not become brown and
mushy. If using russets or reds,
they should be peeled.
Since I love timesaving tech-
niques, I advocate using the food
processor to grate the potatoes
and vegetables. However, this
method produces a slightly gum-
mier potato. Therefore, it is nec-
essary to gently rinse the grated
potatoes under cold running wa-
ter, then pat dry with paper tow-
el.
Latkes are best fried in a non-
stick pan, turning only once. Use
a good quality canola oil or
saflower oil, heating the oil until
it is hot before frying.
Plan to do all of your prep work
and cooking ahead of time.
Latices can be a wonderful time-
saver if prepared in advance and
frozen in a single layer. Once
frozen, they can be stacked and
transferred to plastic freezer bags.
When ready to serve, preheat
oven to 375 F, transfer pancakes
to a cookie sheet in a single layer
and reheat for 20 minutes.
If holiday parties are your forte,
everyone will delight in a BYOL
(bring your own latke) Chanukah
party. There's no need to knock
yourself out. Using the food
processor and the freezer will save
you time, which is, after all, bet-
ter spent in the company of loved
ones and guests.
I've created what I call "de-
signer add-ins." You add in what
you like to suit your taste buds
and complement your meal. Try
one, try them all. Be creative; let
your imagination explore the end-
less varieties of dried fruits and
spices you can add. The add-ins
I suggest are:
* 1/2 cup currants
* 1/2 cup chopped cranberries,
fresh or frozen
* 1 cup fresh raspberries
* 1 cup fresh strawberries,
sliced
* 1 cup chopped rhubarb plus
1/2 cup sugar ❑
