flour in a large mixing bowl
and mix until well blended.
Season to taste with salt and
pepper. Heat oil to depth of th
inch in a heavy skillet over
a medium heat. When hot
add the zucchini mixture by
heaping tablespoons into the
oil without crowding the skil-
let. Flatten out each a bit
with the back of a spoon.Cook
for about 1 minutes on each
side or until nicely browned.
Drain on paper towel and
sprinkle with salt and pep-
per. Serve at once. 12 to 14
pancakes. These go great
with a tomato salsa.

CHOCOLATE CHIP
PUMPKIN COOKIES
1 /2 c. shortening
1'/4 c. brown sugar, firmly
packed
2 eggs
1 t. vanilla
1 1 /2 c. mashed cooked or
canned pumpkin
2'/2 c. sifted flour
4 t. baking powder
1 /2 t. salt
1 /2 t. ground cinnamon
1/2 t. ground nutmeg
1 c. chocolate chips
1 c. chopped nuts
Cream together shortening
and brown sugar. Add eggs:
beat thoroughly. Mix in vanil-
la and pumpkin. Sift togeth-
er dry ingredients. Blend into
creamed mixture. Stir in
chips and chopped nuts. Drop
dough by heaping teaspoon-
fuls about 2" apart onto
greased baking sheet. Bake
in a 375 degree oven 15 min-
utes until lightly browned.
Remove cookies and cool on
racks.

ACORN SQUASH WITH
CREAMED ONIONS
3 acorn squash
salt
2 lbs. small onions, peeled
(approx. 4 cups)
1 /2 c. light raisins
2 T. butter or regular mar-
garine
2 T. flour
t. salt

1'/2 c. milk or non dairy
creamer
'/4 t. ground nutmeg
Wash squash, cut in halves
lengthwise and remove seeds.
Place squash cut side down
in a shallow baking pan. Add
6 T. water to the pan. Bake in
hot oven (400 degrees) for 30
minutes or until tender. Cook
onions in boiling salted wa-
ter, covered about 30 minutes
or until tender, drain. Cover
raisins with water and sim-
mer 10 minutes; drain. Melt
butter or margarine, blend in
flour and 1 /4 t. salt. Add milk
all at once. Cook and stir un-
til sauce is thickened. Blend
in 't t. nutmeg. Gently stir in
onions and raisins. Spoon
into cooked squash halves
and sprinkle with addition-
al nutmeg.

ACORN SQUASH WITH
FRUIT STUFFING
3 small acorn squash
1 can (20 ox.) crushed
pineapple, drained
2 medium apples, cored,
diced
4 stalks celery, chopped
1-8oz. can water chestnuts,
chopped
'/2 c. shortening
1 /2 c. light brown sugar
1 T. soy sauce
1 /2 t. dry mustard
1 /2 t. ground cinnamon
Heat oven to 350 degrees.
Cut each squash in half cross-
wise. Remove seeds. Bake up-
side down in baking pan with
a little water added until ten-
der. 35 to 40 minutes. Mix re-
maining ingredients in large
bowl. Drain water from bak-
ing pan. Turn squash right
side up and fill with fruit
mixture. Bake until heated
thoroughly. Approx. 15 min-
utes. ❑

U.S. Team
Is Attacked

Washington (JTA) — The
U.S. government expressed
concern to German au-
thorities this week after a
member of a U.S. sports
team was attacked by Ger-
man neo-Nazis in what ap-
peared to be a racially
motivated incident.
A State Department
spokesman said U.S. offi-
cials "took the incident seri-
ously and had spoken with
German authorities."
The U.S. luge team, who
are specialty sledders, were
practicing in the eastern
German town of Oberhof. ❑
