ome call it a wiener; some
call it knackwurst (fla-
vored with cumin, pars-
ley and saltpetre to give
a pinkish color), and some call
it frankfurter sausage.
Whatever it is called, it varies
in length from two inches (pigs
in a blanket) to 10 inches (jum-
bo), and is usually slim but can
be stodgy. They are made with
either beef, veal, turkey, chick-
en and even soybeans (tofu).
These tubular treats can be
dipped in a cornmeal mixture,
deep fried and eaten on a stick,
sliced and baked in a casserole
or soup, chopped toppings for a
pizza, wrapped in paper towel
(that is all natural wood fibers
and contains no artificial colors
of dyes) pierced 2 times and
cooked in the microwave at high
for 30-60 seconds, depending on
the wattage. Tofu dogs should
not be cooked in the microwave;
they become rubbery.
This favorite for children of
all ages, originated in the Unit-
ed States in the 1930s. The
name, "hot dog," was taken
from a humorous drawing of a
dachshund in the form of a
sausage.
Having a job today is a good
enough reason for a party, but
the credit for this legal holiday
of Labor Day, goes to Peter J.
McGuire, founder of the Unit-
ed Brotherhood of Carpenters,
in 1882. It is a day of honoring
the country's working people
with a day of rest and relaxation
signaling the summer's end.
Weather permitting, the La-
bor Day fare is usually the final
group outing of the summer.
The menu ideas below feature
a variety of hot dogs, the abun-
dant crops of the late summer
and ease of preparation so that
everyone, including the cook,
has a Happy Labor Day!!!
I CLOSED LABOR DAY HAPPY HOLIDAY
Lay paper towels on mi-
crowave-safe plate. Place
knackwurst creating a ring
around the perimeter of the
plate. In a small bowl combine
sauerkraut, apple, peach and
caraway. Mix well. Spoon into
center of knackwurst ring. Lift
corners of towels to meet in cen-
ter of sauerkraut. Pour 3/4 cup
beer evenly over the plate. Mi-
crowave at 70 percent (medium
high) for 7-13 minutes, or until
hot, rotating plate twice.
HOT DIGGITY DOG
CASSEROLE
Conventional oven method
or can be cooked on grill (use
throw-away aluminum casse-
role)
• 8 all-beef hot dogs, cut into
1-inch slices
• 2 cans vegetarian baked
beans
• 18-ounce can tomato sauce
• 1 medium-size onion, diced
• 1 generous teaspoon of
prepared mustard
Mix all ingredients in a 1 1/2
quart casserole. Bake covered
for 35 minutes at 350 degrees,
uncovered for 5 minutes. Serve
with Fried Dill Pickles.
FRIED DILL PICKLES
• 1 egg beaten
• V, cup water
• 1 tablespoon all-purpose flour
• 1 teaspoon Worcestershire
sauce
• 6 drops of hot sauce
• 3% cups all-purpose flour
• 3/4 teaspoon salt
• st, teaspoon pepper
• 1 quart sliced dill pickles,
drained or homemade pickles
• Vegetable oil
Combine first 5 ingredients,
mix and set aside. Combine
flour, salt and pepper, mix well.
Dip pickles into wet mixture,
dredge in flour mixture; repeat
with all slices. Fry in heat oiled
(350 degrees) until they float
and are golden brown. Drain on
paper towels and serve imme-
diately.
CHICKEN DOG
APPETIZER
Microwave Method
• 1 12-ounce bottle chili sauce
• 3 tablespoons brown sugar
• 2 tablespoons minced onion
• 2 tablespoons bourbon
• 'A teaspoon ground ginger
• 1/, teaspoon dry mustard
• 1 pound chicken dogs, cut
into inch slices
Combine first 6 ingredients
in a 1V2 quart casserole. Cover
with plastic wrap, and mi-
crowave at high for 1!/2-2V2min-
utes or until hot. Stir in hot dog
slices; cover and microwave at
high for 4-5 minutes, stirring
once. Serve with wooden
picks.
