Praline:
1 cup sugar
'i2 cup slivered almonds
1. In large skillet, heat apri-
cot preserves, lemon juice and
apple juice. Stir over medium
heat to melt.
2. Add pears. Cover and cook,
basting several times with hot
juice for 5 minutes, or until ten-
der. Sprinkle with pistachios.
3. Divide between 4 dessert
dishes.
4. Break up praline into 12
irregular pieces. Wedge 3 pieces
into pears in each dish.
To prepare praline: Oil a
12x12-inch piece of heavy foil
2. Heat small, heavy pan over
medium heat. Sprinkle 1/4 cup
sugar in and allow to melt be-
fore adding next 1/4 cup, stirring
constantly.
3. Heat until sugar is melted
and golden. Stir in almonds.
4. Immediately, pour mixture
onto prepared foil, spreading
thinly with a round bladed
knife. (Mixture quickly hard-
ens). When cooled, break up
into 12 pieces and use as gar-
nish. Serves 4.

cots, angel food cake, heavy
cream
3/4 cup orange juice
3 oz. package orange
flavored gelatin
6 fresh apricots, stones
removed and coarsely
chopped OR 8 oz can
apricots, drained and
chopped
1 angel food cake
1 cup heavy cream
6 apricot halves for
garnish (optional)
1. Heat orange juice to sim-
mer, pour over orange gelatin
and stir until gelatin is dis-
solved.
2. Stir in apricots and chill 2-
3 hours or until mixture is the
consistency of egg whites.
3. Whip cream until stifrAnd
fold into gelatin mixture.
4. Cut cake horizontally into
three layers.
5. Spoon gelatin cream be-
tween cake layers and chill un-
til firm.
6. Garnish with apricot
halves before serving. Serves
10-12.
