Thai dining is not a fad .. . and the trend connotation is only to explain how so many people are leaning with the knife and fork. The false beliefs about Thai cooking have been overcome . . . Now people know it can be gotten in the savor choices of desire. One of the better restaurants serving this popular food is Taste of Thailand in the Auburn Crossing Center which is owned by Paul Freed and sister Sharon Berkowitz on University Avenue in Auburn Hills. This August will be its third anniversary and owners Mike Hall, wife Primprau and her sister Wannee Shaw, have made certain the authentici- ty of Southern Thai cuisine continues to be maintained. Thai cooking comes in many variations . . . with ex- tensive selections . . . and Taste of Thailand also allows meat eaters, vegetarians and diet watchers to enjoy their selections. Like so many other people, Art Shafer cannot eat spices . . . Yet he thoroughly enjoyed his meal at Taste of Thailand . . . Art, too, was skeptical but has learned a lesson. Any good restaurant worth its salt or whatever will serve food as the customer desires . . . A number of the items on Taste of Thailand's menu are already without spices or can be gotten that way with no loss of taste. Mike, Primprau and Wan- nee got into the restaurant business by accident . . . London-born, he was in the publishing trade and met a fellow who owned a Thai restaurant . . . Mike worked as its manager for eight months when he said to Prim- prau, "I can manage and you can cook, so why don't we open our own restaurant?" . . . Sister-in-law Wannee wanted in, too, but only if they moved from Oregon to Michigan. While waiting for the Taste of Thailand doors to open, Mike worked here in Southfield at Bangkok Club . . . He has learned that every Thai restaurant is different . . . Much depends on who does the cooking since everyone has his or her own interpretation of how a Thai dish should be made . . . Some selections at different Thai restaurants, according to Mike, are not the same. Taste of Thailand, he says, is the only restaurant of its kind that makes the crispy whitefish, pickerel or black pompano with choices of three sauces, tamarind, lemon ginger or sweet and sour . . . His wife and sister- in-law make all the sauces .. . If any other Thai dining spot makes the chicken or shrimp stir-fry in a light peanut sauce curry, Mike in his English accent maintains that it was copied from them. He not only has many Jewish customers but also two Jewish brothers-in-law, married to his wife's sisters . . . One is in Taiwan with the U.S. foreign service as a political analyst . . . The other, formerly a magazine publisher, is now a free-lance writer/editor in Oregon. Mike and Primprau's two children have biblical names . . . Carmi and Naomi. Taste of Thailand is very clean (92 percent by Oakland County Health Dept.) with gray walls, rose striping, framed pictures of temple rubbings made from rice paper bought in Thailand, gray carpeting, light rose booths and chair paddings, gray tables, white linen napkins, umbrellas on walls made of silk from Chiang Mai, a province of Thailand, etc. Primprau is a registered nurse too, and Wannee also makes the homemade Key lime pie which is served almost frozen, the New York- style cheesecake and custard flan . . . Both are Taste of Thailand's main cooks, dividing the kitchen time along with two other chefs. Mike does everything from greeting people to mopping the floor, washing dishes and personally changing the oil and greasetraps weekly .. . an important chore that only an owner would make sure is done properly . . . believe me. Substitutions are allowed at Taste of Thailand . . . another fine touch . . . As example, if people don't like a certain vegetable that may come with the dish, whatever they want is brought. There is even a pretty wall hanging in the clean men's room . . . and Taste of Thailand's kitchen is spotless with its gleaming stainless steel. Lunch is served Monday through Friday 11 a.m. to 2 p.m.; dinner Friday and Saturday 5 p.m. to 10:30 p.m.; closed Sundays except for private parties. Plus its exotic cocktails and full bar, also served are non- alcoholic beers and those from Thailand, Japan and America. Close to Meadowbrook, Pine Knob and The Palace, Taste of Thailand has a very hard combination to beat .. . Its owners are in the kitchen and in front at all times .. . an almost certain winner in the restaurant business. THE SUCCESSFUL Opera Night that has become a monthly regular hit at Sultan's Restaurant on Or- chard Lake Road north of 14 Mile in Robin's Nest Shopp- ing Center, is this Monday evening at 7 p.m. . . . "A Sum- mer Eve at the Opera" by Sultan's will have Mark Von- drak, baritone; Maria Cimarelli, soprano; and Peter Jacobs, piano . . . So many opera lovers out there that Wally Soro Joseph, Sultan's general manager, is letting them use their Jewish News two-for-one coupons for the monthly event. THERE'S A NEW look at the over-50-year-old Kingsley Inn on Woodward and Long Lake Rd. . . . plus a new menu with items that Executive Chef Remy Berde has customers sinking their teeth into with gusto. Since the site once served as an Indian trading post inn, tavern and residence on the old mud road then called Saginaw Trail running to Pontiac, Kingsley's lounge area which has been en- larged, is now called Trader's Bar and Grill . . . with casual elegance . . . Customers of the new room now have anything from escargot in puff pastry or seared scallops on rice noodles to burger platters, filet steak sandwich or Kingsley's noted sauteed Michigan perch, popular fruit platter, etc.
