Prepare sponge cake: Pre-
heat oven to 375F. Grease
13x9 inch baking pan. In ,
large bowl, whisk eggs and ' 1
sugar for 8-10 minutes osz.-
until thick and doubled in
volume. Sift flour with bak-
ing powder and gently fold
into mixture. Spoon into pre-
pared cake pan. Bake in pre-
heated oven 20-25 minutes or
until toothpick inserted it
center comes out clean.
Loosen edges with knife and
leave in pan to cool 10 min-
utes. Remove from pan and
cool completely on cake rack.
Cut into 2x2-inch (approx.)
square when needed. This is,
best when left out overnight,
loosely covered, at room tem-
perature.
Preparing icing: Just before
using, sift confectioners sugar
and cocoa into heatproof bowl.
Stir in butter and milk. Stir
over pan of simmering water
until icing is of coating con-,
sistency. To assembly: With a\
fork, turn each piece of cake
in icing to coat completely.
Toss in coconut to cover.
Makes 18-20.
