BAKED FISH WITH SAFFRON VEGETABLES )

Makes 4 servings
4 (4-ounce) grey sole or other white fish fillets
2 tablespoons lemon juice
18 teaspoon freshly ground black pepper
4 scallions, sliced
2 tablespoons FLEISCHMANN'S® Sweet Unsalted Margarine
2 small zucchini, cut into 2-inch julienne strips
6 medium mushrooms, sliced
1 12 teaspoon saffron, rubbed to break strands
2 small tomatoes, peeled, seeded and cut into chunks
2 cups hot cooked rice, prepared without added salt
1 14 cup chopped parsley
Cut heavy foil into 4 (12-inch) squares. Arrange 1 fish fillet in center of
each foil square. Sprinkle with lemon juice and pepper; set aside.

In large skillet, over low heat, cook and stir scallions in margarine until
tender. Add zucchini and mushrooms; cook for 1 minute over high
heat. Stir in saffron; remove from heat. Stir in tomatoes. Spoon
vegetable mixture evenly over fillets. Enclose fish and vegetables in
foil, crimping edges to seal securely. Arrange on baking sheet. Bake at
500°F for 9 to 10 minutes or until fish barely changes color and flakes
easily with a fork. Mix rice and parsley. Serve fish and vegetables over
rice mixture.

Nutrition information per serving: 315 calories, 103 mg sodium, 54 mg
cholesterol, 7 gm total fat (20% calories from fat), 1 gm saturated fat, 2 gm
dietary fiber.

has been sentenced to the
maximum 30 years in prison
for planting bombs at three
Israeli sites in New York 20
years ago.
In a two-hour statement in
federal court in Brooklyn on
April 15, Khaled el-Mo-
hammed Jassem contended
that he had been framed by
the Israeli and United States
governments and abandoned
by the PLO after his arrest in
Italy in 1991.
But U.S. District Judge
Jack Weinstein concluded
that Mr. Jassem deserved the
sentence for "dangerous ter-
rorist activities" that "could
haiTe killed and maimed hun-
dreds, caused large fires and
terrorized thousands."
The judge added that Mr.
Jassem's sentence should
make clear to "prospective
terrorists that they are not
welcome to bomb and kill in
this country."
Mr. Jassem will be eligible
for parole after 10 years.
Defense lawyers William
Kunstler and Ronald Kuby
argued that even if Mr.
Jassem had planted the
bombs 1973, nobody had been
harmed because the bombs
never went off.
After the sentencing hear-
ing, Mr. Kunstler said the
judge had shown a "total lack
of compassion."
He also accused Judge We-
instein of allowing his feelings
as a Jew to color his decision.
Mr. Kunstler and Mr. Kuby
also argued that the trial's
start on March 4, six days af-
ter the World Trade Center
bombing, obliterated Mr.
Jassem's right to a fair trial
because of the extensive news
coverage of the bombing and
the alleged involvement of
Palestinians. Judge Wein-
stein replied that he was sat-
isfied that this year's bombing
had not influenced jurors in
their deliberation on the ver-
dict.
And before announcing the
sentence, Judge Weinstein
said that "religion has noth-
ing to do with my decisions as
a judge."
