PINEAPPLE ALMOND
DATE BREAD
1 cup sliced almonds
3 /4 cup sugar
1 /2 cup margarine, softened
1 egg
1 small (8 oz.) can crushed
pineapple
1 Tbsp. grated orange peel
2 cups flour
1 tsp. baking powder
1 tsp. baking soda
1 /4 tsp. nutmeg
1 cup chopped dates
Toast 3 /4 cup almonds; re-
serve remaining 1/4 cup for top-
ping. Beat sugar and mar-
garine in large bowl until light
and fluffy. Beat in egg until
blended. Stir in undrained
pineapple and orange peel.
Combine flour, baking powder,
soda and nutmeg in a medium
bowl. Beat into pineapple mix-
ture until blended. Stir in 3 /4
cup toasted almonds and
dates. Pour batter into well-
greased 9 by 5-inch loaf pan.
Sprinkle remaining almonds
on top. Bake at 350 55 to 60
minutes or until tests done.
Cool thoroughly before remov-
ing from pan. To serve, cut loaf
into 14 slices, then cut each
slice lengthwise in half. Makes
28 servings.
ASPARAGUS SALAD
WITH PINE NUTS
2 lbs. fresh asparagus
1 /4 cup pine nuts
1/2 cup olive oil
2 Tbsp. freshly squeezed
lemon juice
1 large garlic clove, minced
1 tsp. kosher salt
1 /2 tsp. sugar
freshly ground black
pepper to taste
1 Tbsp. minced fresh
oregano or 1 tsp. dried
1 Tbsp. minced fresh basil
or 1 tsp. dried
Cut tough ends from the
asparagus and peel the stalks
using a vegetable peeler from
just below the tip to the base.
Bring a large pan of salted
water to a boil, add the aspar-
agus and cook 2 to 4 minutes
until the asparagus is just
tender. Immediately remove
from the boiling water and
plunge into a bowl of ice water.
After 1 minute, drain and dry
on paper towels, then cut into
2-inch lengths and reserve. In
a dry, heavy-bottomed skillet,
toast the pine nuts until even-
ly brown, shaking the pan
often to toss the nuts. Set aside
on a plate to cool. Combine the
vinaigrette ingredients in a jar
with a tight-fitting lid. Shake
well, taste and adjust season-
ings. Reserve at room temp-
erature. About 20 minutes
before serving, toss the as-
paragus with the well-shaken
vinaigrette and sprinkle the
pine nuts on top. Toss again
just before serving. Serves 6 to
8.
JELLIED
ORANGE SLICES
6 large naval oranges
juice of 1 lemon
2 Tbsp. sugar
11 /2 tsp. unflavored gelatin
Cut oranges in half length-
wise. Juice oranges; reserve
juice. Remove pulp from 6
orange halves, leaving cups
clean. lb steady cups, place in
standard size muffin tins. In
saucepan combine 1 cup
orange juice, lemon juice,
sugar and gelatin. Bring mix-
ture to a boil, stirring. Reserv-
ing small amount, poor juice
mixture into orange cups. Let
stand 10 minutes. Some of the
mixture will be absorbed into
shells. Using reserved juice
mixture, refill cups to top level.
Refrigerate several hours or
overnight, until firm. When
ready to serve, slice cups into
3 or 4 wedges. These can be us-
ed as a snack or lovely garnish
for meat or poultry. Yields 15
to 20 wedges.

Beth El Hosts
Children's Show
The Loren B. Fischer Cul-
tural Arts Series for Children
and Their Families will close
the 1992-93 season at Temple
Beth El with a Theatreworks,
U.S.A. production of the
children's classic, Heidi. The
program will be held 1 p.m.
March 14 at the temple.
The production is the sec-
ond in a two-part series
underwritten by Philip B. and
Myrna Fischer in memory of
their daughter, Loren.
Heidi is open to the public
at no charge.
Musical Fund
At Wayne State
Emma Lazaroff Schaver has
made a commitment of
$25,000 to the Department of
Music at Wayne State
University to establish the
Rebecca Katzman Frohman
Memorial Scholarship Fund
for piano studies.
The first award will be
made in the 1993/94 school
year.
The late Rebecca Katzman
Frohman was a longtime
friend and accompanist to
Mrs. Schaver.
