hen I received the
phone call, it was a
bone-chilling Sun-
day afternoon.
Through her tears, my friend
told me her brother had just
died.
Visits and words of consola-
tion are invaluable support to
the bereaved while sitting
shiva (the seven days of
mourning observed by imme-
diate family). An old tradition
that provides further comfort
is for neighbors to prepare a
meal for mourners returning
from the cemetery. It has also
become customary for friends
making a condolence call to
bring food, usually cakes and
cookies.
But it takes more than
sweets to stay physically
strong to endure the emo-
tional trauma. During shiva
week, I have found that one-
dish main meals are particu-
larly welcomed by bereaved
families even though they in-
sist "I couldn't eat a thing."
Besides, eating together pro-
vides a sense of normalcy.
On that cold afternoon, I
checked my freezer, surprised
at the forgotten contents (it's
a good idea to list contents
and date when you stock the
freezer and mark off when it's
removed.)
Within an hour, the rich
aroma of roasted chicken and
crisp browned potatoes filled
my kitchen and I could think
of at least half a dozen more
to cook.
These meals take no longer
than the time to bake a cake,
and the recipes below are
neither fancy nor compli-
cated. Try to 'dovetail' ap-
pliances to drastically reduce
cooking times. Potatoes may
be partially baked in the
microwave, then tucked in
with chicken to roast in con-
ventional oven. Frozen meats
defrost in less than 15 min-
utes in the microwave; then
proceed with the recipe and
finish off in your conventional
oven. Use foil baking pans so
you don't worry about the re-
turn of a favorite baking dish.
Here's what you can rustle
up on an hour's notice. Reci-
pes may be doubled.

dressing
2 tablespoons dijon
mustard
3 tablespoons vegetable
oil
2 whole chicken breasts,
split
2 baking potatoes,
scrubbed, each cut in 6
chunks
1 large sweet potato,
scrubbed and cut in 6-8
chunks

ROASTED
DIJON CHICKEN
AND CHUNKY
POTATOES
Dressing:
1 tablespoon honey
% cup vinaigrette

TURKEY-APPLE CHILI
ON TOASTED
GARLIC BUNS
1 /2 pound ground turkey
2 tablespoons vegetable
oil

Preheat oven to 400
degrees. Pour honey into
small microwave-safe bowl.
Heat for 15 seconds to liquify.
Whisk in vinaigrette dressing
and mustard. Set aside. If
chicken is frozen, thaw in
microwave at High for 15

minutes. Pour vegetable oil
into baking pan. Arrange
thawed chicken breasts, bone
side down, in a layer in pan.
Spoon honey dressing over.
Cover lightly with foil and
place in preheated oven. Bake
for 25 minutes. While chicken
is baking, place potato
chunks on large micro-
wave-safe platter. Sprinkle
with salt and pepper and
cover lightly with paper
towel. Cook in microwave for
10 to 12 minutes until begin-
ning to soften. Tuck in be-
tween chicken breasts. Baste
with pan juices. Return to
oven and bake 15 to 20 min-
utes longer until chicken
juices run clear when pierced
with fork and potatoes are
tender. Serves 4.
Note: If kosher prepared
honey mustard dressing is
available, substitute V2. cup for
dressing above.
