eggs, onion, salt, pepper and
mix well.
In a large heavy skillet,
heat oil. For each pancake,
drop a heaping tablespoon
of mixture into hot, but not
smoking oil. Flatten each pazes
cake into a 2 1/2-inch round.
Fry turning once, until gold-
en brown and crisp. Drain
well on paper towels. They
can be reheated in a 400 de-
gree oven for about 5 minutes.
To serve, spoon 1 tablespooff
sour cream with a thin strip
of green onion and 2 strips of
salmon over each pancake
Makes 8 servings.

2 teaspoons rice vinegar

Grate potatoes alternatel
with the onion in a food
processor. Add vinegar and 1
teaspoon salt. Transfer the
mixture to a large sieve set
over a bowl. Grate the zuc-
chini on the coarse side of a
grater and toss with the re-
maining 1 teaspoon salt. Add
the mixture to the sieve, and
extract all liquid.
Pour off all liquid; put fife
potatoes and vegetables into
the bowl. Add the thyme,
flour, eggs and pepper t
taste. Combine and stir well.
In a large heavy skillet,
heat 1/4 inch oil until hot, but
not smoking. Drop the mil --
ture by tablespoons in batch-
es, patting down with the
back of the spoon into thi
pancakes. Fry, turning once,
until they are browned an
crisp. Transfer to paper tow-
els and keep warm on rack
a 200 degree oven. Makes 24
pancakes.
