El Al's Kitchens
Are Famous With Fliers

W

here can you find
13,675 bagels, 6,500
cinnamon-nut
muffins and 700
pounds of turkey under one
roof? On board El Al airlines.
And that's just a sample of
noshes served weekly on El Al
flights from New York to Tel
Aviv.
Responsible for this flying
dining experience is Boren-
stein Caterers, New York, cer-
tified glatt kosher by the
Orthodox Union, together
with Swiss-trained executive
chef Otto Keller. Along with
a staff of 1 sous chef, 5 cooks,
up to 25 kitchen helpers and
2 bakers, 45,000 meals a
week are prepared and placed
aboard Er Al planes in peak
season.
Israel's national airline car-
rier has had vast and unusu-
al experiences in feeding and
transporting people from all
nations and ethnic cultures to
a new country. In 1950, Op-
eration Magic Carpet airlift-
ed 47,000 Yemenite Jews to
safety in Israel.
Food regulations for trav-
elers are strictly adhered to.
For example, some Hindu
vegetarians do not eat onions
or garlic. Mormons do not
drink alcohol, coffee, tea, or
even Coca-Cola; during Lent,
some passengers require
meals prepared from only
fruits and vegetables. On reg-
ular flights, special diet meals
are available on request and
if need be, hospital dieticians
are consulted.
El Al recipes are a closely
guarded secret but here are
some of our simplified inter-
pretations from Israel's fa-
mous flying kitchens.

MONEY GLORY
MUFFINS
1 3/4 cups all-purpose
flour
1/4 cup wheat germ
3 tablespoons sugar
1 teaspoon cinnamon
3 teaspoons baking pow-
der
1 medium carrot, finely
grated
1/2 cup raisins
1/2 cup chopped walnuts
1 egg, lightly beaten
1 cup buttermilk
2 tablespoons molasses

Preheat oven to 400 de-
grees. Generously grease tray
of 12 muffin cups. In mixing
bowl, combine flour, wheat
germ, sugar, cinnamon and
baking powder. Add carrot,

raisins and walnuts. Make a
well in center of ingredients
and add egg, buttermilk and
molasses. Stir to blend. Spoor
into prepared muffin cups,
filling two-thirds full. Bake 25
minutes until nicely browned
and firm to touch. Makes 12.

CHOCOLATE DANISH
BREAD
2 cups all-purpose flour
2 teaspoons baking
powder
1/2 cup sugar
1 tablespoon cocoa
(unsweetened)
1 teaspoon cinnamon
1/3 cup butter or
margerine
1 cup miniature dark
chocolate chips
1/2 cup apricots, coarsely
chopped
1 egg, beaten
3/4 cup milk
Topping:
2 tablespoons sugar
mixed with 2 teaspoons
cinnamon

Preheat oven to 350 de-
grees. Grease 8 by 8 by 2-inch
baking dish. Combine flour
baking powder, sugar, cocoa
and cinnamon into bowl. Cut
in butter until mixture re-
sembles fine crumbs. Add
chocolate chips and apricots.
Make a well in center and stir
in egg and milk and add flour
mixture. Mix to moisten.
Spoon into prepared dish.
Sprinkle with cinnamon-sug-
ar mixture and bake 40 to 45
minutes in preheated oven.
Cut in squares and serve
warm. 12 to 16 pieces.

CHICKEN BREAST
STUFFED WITH
PISTACHIOS
Filling:
1/4 cup pistachios,
shelled
2 oz lean pastrami, cut in
pieces
4 oz boneless chicken,
cut in pieces
1 egg
1 scallion, cut in pieces
1/4 teaspoon pepper
1/8 teaspoon salt
4 chicken breast halves,
boned and skinless
2 tablespoons oil
1/2 cup seasoned
breadcrumbs
2 tablespoons oil for
frying
1/4-1/2 cup chicken or
vegetable broth
