BEET AND
HERRING SALAD
8 oz. jar herring tidbits
in wine sauce,
drained
8 oz. can sliced beets,
drained and cut into
'/4 inch strips
1 rib celery, thinly sliced
1 tablespoon reduced
calorie mayonnaise
freshly ground pepper to
taste
shredded lettuce
Cut herring and onions
from jar into 1/2 inch pieces.
Place in a small bowl. Gently
stir in beets, celery, mayon-
naise and pepper to taste.
Line 4 salad plates with
shredded lettuce. Divide mix-
ture into 4 and spoon each
portion onto shredded lettuce
on each plate. Serves 4.

LENTIL SOUP

11/2 cups lentils
1 tablespoon olive oil
1 teaspoon sesame oil
1 large onion, thinly
sliced
1-16 oz. can tomatoes,
undrained and
mashed with fork
1 cup coriander sprigs,
packed
2 teaspoons chopped
garlic
1 tablespoon ground
cumin
5 cups water
salt and freshly ground
pepper to taste
Wash lentils in cold water
picking out any discolored
pieces. Heat oils in heavy
saucepan, add lentils and
onions and cook over medium
heat for 2-3 minutes. Add un-
drained tomatoes, coriander,
garlic, cumin and water and
bring to boil. Cover and sim-
mer over low heat until len-
tils are tender, 50-60 minutes.
Stir often during cooking
time adding more water if
mixture becomes too thick.
Serves 4-6.

WHITE AND GOLD
LATKES WITH DILL
`CREAM'

3 medium potatoes,
peeled
1 large carrot, peeled
1 small onion, peeled
1 tablespoon fresh
parsley sprigs
1/2 teaspoon salt
1/4 teaspoon white pepper
2 tablespoons matzah
meal
2 egg whites, stiffly
whipped
Cut potatoes, carrot and
onion into 1-inch chunks.
Place in food processor with
parsley and chop to coarse
consistency. Turn into
medium bowl and stir in salt

and pepper. Gently fold in
sitffly beaten egg whites. Let
mixture rest for 5 minutes.
Lightly grease a large non-
stick skillet and heat over
medium heat. Drop mixture
by 'A cupful into hot skillet
leaving about 1/2-inch between
each latke. Flatten each with
back of a spoon. Cook for 3-4
minutes on each side until
crisp and browned and
vegetables are soft. Top with
Dill "Cream". Makes 10-3
inch latkes.
DILL "CREAM": Mix
together 1/2 cup plain yogurt,
2 tablespoons sour half and
half, 1/8 teaspoon freshly
ground pepper and 2 teas-
poons dried dill. Makes scant
3 /4 cup. ❑
