(Blessing Cake)
1 1/2 cups sugar
1/4 pound (1 stick) sweet
butter, softened
9 oz. cream cheese,
softened
2 teaspoons vanilla
2 teaspoons baking
powder
2 cups cake flour
4 eggs
juice of 1 lemon
2 tablespoons
confectioners sugar
Preheat oven to 350F. Spray
10 or 12-inch bundt-pan with
non-stick vegetable spray.
In small mixing bowl of elec-
tric mixer, whip sugar, butter,
cream cheese and vanilla until
light and fluffy. Stir baking pow-
der into cake flour. Add eggs to
butter mixture, one at a time
along with 2 tablespoons flour
mixture. Flour should be com-
pletely absorbed after each ad-
dition. Beat in remaining flour
mixture gradually. Spoon into
prepared pan. Bake in preheat-
ed oven for 50 to 60 minutes or
until toothpick comes out clean
when inserted in center. Cool in
pan for 5 minutes before turn-
ing onto wire rack. Combine
lemon juice and confectioners
sugar. While cake is still warm,
insert long skewer 10 times into
cake. Immediately pour lemon-
sugar mixture over. Cool com-
pletely before serving or storing.
Serves 16 to 20.
Garnish Tip: Fill center cavi-
ty with tiny bunches of seedless
grapes. ❑
