MY FAVORITE
STRUDEL DOUGH
3 eggs
1 cup sugar
1 heaping tsp. baking
powder
1 scant cup oil
1 cup water
pinch of salt
1 tsp. vanilla
flour-start with about 3
cups
(dough should be quite
soft, yet easy to work
with)
Beat eggs and sugar. Add
oil and water. Add flour, bak-
ing powder and salt, a little at
a time. Roll out, you should
have at least 3 long rolls.
Brush with oil. Fill with ap-
ples (combined with 1/4 tsp.
lemon juice, raisins, cin-
namon and sugar) or
whatever filling you choose.
Jelly, raisins, coconut and
nuts are also great. Roll up,
brush tops with oil and
sprinkle with cinnamon/
sugar, if desired. Bake at 375 °
on a greased baking sheet un-
til brown. Note: 1 egg and 1/
of everything else gives 2
strudel rolls.
ICE CREAM STRUDEL
/2 lb. butter, softened
1 pint vanilla ice cream
(or 1 cup sour cream)
2 cups sifted flour
Cream butter. Add softened
ice cream, then add flour.
Knead on floured board.
Place in refrigerator over-
night for 6 hours. Divide
dough into 4 parts. Let sit at
room temperature just until
you can roll out on a floured
board into a rectangle shape.
Place desired filling and roll
up sealing edges. Bake at
375° for 30 minutes. Lower
oven to 325 degrees and bake
until brown. Slice when cool.
