BANANAS IN COCONUT MILK This fast-fix dessert is loved by children and adults alike. 2 112 cups unsweetened co- conut milk (see below) 1/4 cup sugar 1/2 teaspoon salt 4 large bananas, peeled and sliced 1 1/2-inch thick, di- agonally 1. In large saucepan, bring co- conut milk to a boil over high heat. Stir in sugar and salt. 2. Reduce heat to low and add bananas. Cover and simmer 5 minutes. Do not stir or bananas will be mushy. Serve hot or cold. Coconut Milk: In large bowl combine 5 cups dried shredded unsweetened coconut (dessicat- ed coconut) with 5 cups boiling water. Let stand at least 2 hours. Strain through 2 layers cheesecloth. Discard coconut. Liquid is coconut milk and may L _ be stored up to 1 week in re- - frigerator. Serves 4 to 6.
