A restaurant's personnel is its best asset . . . The food and drinks may be great, but if the servers are surly, apathe- tic and impolite, patrons won't come back. Its decor may have been remodeled by the finest de- signer so that the establish- ment has a new, glowing splendor with harmonious colors and architectural in- novation, but if the restau- rant servers don't feel good about what they are doing or are not proud of their work, and see that restaurateurs are not dedicated to the best possi- ble service, then owners can kiss their investment goodbye. Servers are generally very aware people . . . They get to know customers whose be- havior changes as the day or evening wears on . . . As a natural part of the work pro- cess, successful servers have to develop special talents to be able to relate to customers . . . Most become very good at critical observation skills. Many waitpersons want to be shown how to do their work better . . . Most of all, they make more money because customers appreciate good service and are apt to give bigger tips for better ser- vice . . . They know how im- portant right and wrong are.. . Server training, however large or small, and by some- one who knows what he or she is talking about, also in- creases self respect . . . a salient element in doing the job with more efficiency. Much has been said and written about the chefs in our region . . . and with good rea- son . . . they are among the nation's finest . . . But any chef worth his or her salt will also give a big salute to the good waitpersons, of which there are many. The chef may prepare food properly, but if it's not brought to the customer pro- mptly and with correct pre- sentation, his good work can go for naught . . . The tastebuds of a waiting-too- long customer, for example, can change rapidly . . . Nothing will satisfy their tastebuds anymore. Someday . . . someday .. . there will be a day set aside . . . and it will be called Waitpersons' Day . . . for those unsung heroes and heroines of the restaurant game who do so much to make an operation tick. THE INVITATION was a travel envelope with boarding pass to give as you entered Matt Brady's at Holiday Inn of Farmington Hills on W. 10 Mile. Well over 300 people were on hand for the grand open- ing of Matt Brady's second operation . . . a fun shindig in the 300-person ballroom where so many parties are be- ing catered by the MB gang — Susan Fayne, Julie Patter- son, Diane Risko and company. Foods of every type were at various stations around the room showing just a portion of what executive chef Randy Smola and his staff can do. Big attraction was the mammoth hamburger pie, so realistic-looking that a couple of folks put their fingers in to see if the bun was really dough . . . They quickly discovered that it wasn't .. . and licked their fingers .. . Alongside was a true graph of a hamburger with specifica- tions, manufacturing re- quirements, dimensions, in- gredients, etc. . . . Burger par- ties are the "in" thing now for a lot of bar mitzvahs to go along with MB's many other styles of dining preparation. Simone Vitale and his group had the people in a great mood with his party- pleasing personality that put big smiles on the dancing folks. Matt Brady was out-of-town but Chef Randy made sure of his representation . . . A 2 1/2-foot caricature of Matt was sculpted by Randy out of a 40-pound solid margarine block (no chicken wires) .. . The very talented Randy also made the two ice sculptures at a lavish sweet table. GET WELL WISHES . to Irving Pitt . . . recuperat- ing at home. PULL OUT YOUR cos- tume or make plans to rent or put one together for a lot of fun . . . Don't worry about the masks, there'll be plenty at the door unless you want a particular kind. Progressive Masquerade is being featured by Mario's, Carl's and Gem Theatre, Oct. 18 . . . First stop is Carl's on Grand River for the 5 p.m. cash bar and 5:30 p.m. seven- course dinner . . . Then to Gem Theatre on Woodward for All Night Strut at 7 p.m. . . . followed by Mario's on Se- cond for champagne toast, dessert, dancing and live entertainment.
