regular St. Peter's fish is tas-
ty, but today's European and
Asian gourmet markets prize
red, firmer fleshed, lower fat
fish."
In an attempt to satisfy
these markets, several fish
breeders in Israel have tried
dying the fish by feeding
them massive amounts of
carotine. Others, working
with university research
teams, have toyed with
sophisticated genetic
engineering theories. None of
these schemes worked. The
kibbutz decided to take
another approach: "We
started with natural muta-
tions," said Mr. Lahav,
"developing these as we bred
the fish." During experimen-
tation, it was discovered that
male fish grow more than
twice as rapidly as females.
Shortly after hatching, the
diets of the fingerlings are
supplemented by hormones
that, according to Lahav,
"basically converts them all
into males," Rapid growth is
only one goal, however, and
Mr. Lahav estimates that
within two or three years the
kibbutz will have perfected
not only a pure orange color,
but a fish with minimal fat
and maximum taste.
Although production of the
red St. Peter's fish is present-
ly 150 tons annually, the kib-
butz hopes to increase this
figure dramatically as more
orders are received from Ita-
ly, France, the United States
and Japan. Ei

Israel Cancels
Taiwan Jets

Tel Aviv (JTA) — Israel
has announced it is cancel-
ing plans to sell 40 Kfir jet
fighters to Taiwan, and the
Chinese have promised they
will only sell Middle Eastern
countries defensive
weaponry in limited quan-
tities that would not en-
danger peace in the region.
The announcements, while
not linked, were made last
week during the visit of the
Chinese foreign minister,
Qian Qichen.
Prime Minister Yitzhak
Rabin said Israel had decid-
ed even before the visit of
the Chinese minister to
refrain from selling Taiwan
the 40 Israeli-designed-and -
built Kfir jets.
The Chinese are currently
selling nuclear reactors to
Iran and Libya, which the
countries maintain are for
civilian purposes.
