Nathan Rothstein's spirits are
grown in mineral water.

Having grown vegetables
the conventional way for
many years, Mr. Ben Zvi swit-
ched to organic farming in
1982 and later began supply-
ing a wide variety of fresh
vegetables to the local
market. "The local market is
relatively small, but growing
steadily," he says. A local
market is also developing for
food products made from
organic produce, including
whole grain sesame paste
(tahini) and whole-wheat
noodles.
In Kibbutz Harduf, founded
in 1982, members take
organic farming one step fur-
ther, producing delectable
cheeses from the milk of their
300 organically fed sheep.
Their whole-grain breads are
also popular all over Israel
and their radishes, fennel,
onions, melons, avocados and
virgin oil are exported to
Europe. In fact, total annual
exports to Europe amount to
$16 million, with 20,000 tons
of organic produce being pro-
duced annually.
Twenty moshavim in the
northern Negev have also
switched to organic farming
methods in recent years, for
the area's excellent conditions
are conducive to growing
citrus, mango and a variety of
vegetables for the winter ex-
port market. Large quantities
of compost, however, must be
added to compensate for the
lack of nutrients in the san-
dy soil.
The Israeli Association of
Bio-Organic Agriculture,
established in the 1970s, now
has 55 grower-member kib-
butzim and communal
moshavim and an additional
100 private growers. The on-
ly way to go is up. ❑
