International Lunches

ampers have returned
home, Labor Day pic-
nics have used the last
of the paper plates, and pack-
ing lunches for school chil-
dren is part of the morning
routine.
Peaches and cherries are
gone. In their place are flavor-
ful egg-shaped, blue-purple
plums (wonderful in baking)
and big meaty Cranshaws.
Don't be surprised if the fall
crop of white turnips, celery
root and cabbage don't cause
cheers from your kids. How-
ever, these ingredients added
to soups, fritters, and salads
will awaken some tiny
palates.
For toddlers and the pre-
school group, try shaping
mini-balls of food, not just
meat but fish and poultry, too.
They can have fun making
them, and they are easier to
pick up and eat. Vegetables
should not be overcooked, for
retention of vitamins. The
favorite utensils for this age
group are fingers since most
of what they put on their
spoon/fork drops off on the
way to their mouth. Home-
made applesauce or cake
made with fresh fruit is bet-
ter than processed sweets.
Geography lessons take on
a personal meaning for older
school children when you pre-
pare foods from different
countries. Include a photo of
the people/city and even write
a message in the language of
that country.

TURKEY MINI-BALLS
Add these mini-balls to
soups, pot pies or pastas for
an easy-to-eat lunch for
toddlers.
1 pound ground turkey
3 tablespoons bread
crumbs/ oatmeal
flakes/flour
1 teaspoon dried parsley
flakes
1 egg, beaten
1 /2 cup chopped onion or
1 tablespoon minced
dried onion
Mix all ingredients thor-
oughly. Refrigerate for 30
minutes. Wet hands frequent-
ly and, using the tip of a tea-
spoon, shape the mixture in-
to 40 to 50 mini-balls. Drop
the balls into about 2-inches
of boiling water and boil for 4
to 5 minutes, until cooked.

strainer, rinse with cold water
and let drip until dry. Add to
fully cooked soups, sauces or
add to pot pies with pre-
cooked vegetables for baking.

COD FISH MINI-BALLS
1 pound raw cod fish (2
slices)
1 large potato, peeled
and cut in half
1 large carrot, peeled
1 small white turnip,
peeled and cut in
half
3 tablespoons flour and 3
tablespoons milk
1 egg white
14 teaspoon white pepper

In a large covered saucepan,
cook cod fish, potato, carrot
and turnip with water to
cover over medium heat until
turnip is soft. Remove bones
carefully from fish and flake.
Mash potato, turnip, carrot
and onion. Make a paste of
flour and milk. Add to
vegetable mixture with fish
and beaten egg white.
Refrigerate for 30 minutes.
Wet hands frequently and us-
'ing the tip of a teaspoon,
shape 40 to 50 mini-balls.
Lightly brown in non-stick
skillet using a scant table-
spoon of oil. Turn balls gently
with wooden spoon. Serve
with macaroni and cheese.

11/4 cups homemade
applesauce, recipe
below
1 /2 cup walnut halves
(optional)
1 /2 cup raisins
1 /2 cup currants
1 1/2 cups flour
1 teaspoon baking soda
1 /2 teaspoon baking powder
1 teaspoon cinnamon
