Then again, they probably wouldn't mind, seeing as how the second Hoa Kow that opened in Crosswinds Mall, Orchard Lake Road at Lone Pine, is using the best of two worlds in its successful endeavor. How Kow's first place in Oak Park that opened more than 37 years ago is still on Nine Mile west of Coolidge, seating about 100. There was a time years back when eating whitefish at a Chinese restaurant was like having steak in a delicatessen . . . Many delis had it, but never featured the dish or were very big on steak. My, how things have turn- ed around at Hoa Kow .. . Between the two locations, West Bloomfield and Oak Park, its fish supplier must be ecstatic . . . with both places together now going more than 1,700 pounds a week .. . It has gotten so big, in fact, that the Hoa Kow whitefish comes in many forms . . . seven different ways . . . Broiled, Hong Kong, Szechuan, Sweet and Sour, Hong Sui, Slightly Breaded and Sauteed with Light Breading and Fresh Vegetables . . . It is not unlikely to sometimes see more people eating whitefish than Chinese food at the two Hoa Kows. But this isn't to say that Hoa Kow has forsaken its Chinese dining . . . not by any means . . . The chef, Jin Qui Hu, is the same one Gene met cooking in the streets of Can- ton, China, and brought to the United States . . . You don't get too much more authentic than someone like him . . . Oriental dining at Hoa Kow is still a heavy favorite. He uses no MSG (monosodi- um glutamate) and almost all foods are cooked in chicken stock . . . These are important factors in healthy eating. Evening hostess at West Bloomfield, personable Carol Homer, came to help when Gene opened in May and has never left . . . Her sons, Brian, at Cambridge Hospital of Harvard Medical School; Kevin, starting dental school in September; and Scott, Olde Stocks branch manager, all grew up in Oak Park with Gene's son Victor. The second West Bloomfield location of Hoa Kow is where the Aristocrat and Medallion restaurants were previously situated, directly across from Manuel's . . . It has a com- plete change . . . more to the modernistic and contem- porary look with very little semblance of Chinese decor . . . Seating in three rooms plus added booths is now 170, including a large lounge ser- ving cocktails and a bigger kitchen than before with even the dishwasher changed. At the West Bloomfield piano Thursday, Friday and Saturday, Don Nadell is head of the Roosevelt School art department in Oak Park with more than 25 years in the O.P. school system, and sees so many of his former students . . . One of them, Victor Woo, Gene's son, works with dad along with brother Arthur, sister Goyann, wife Li Xia and grandfather Dan Woo in running the two Hoa Kow operations . . . Gene's mother, Diane, Victor's grandmother, does a lot of the cooking in Oak Park and visits West Bloomfield to check over things. Among those who have made Hoa Kow an instant success in Crosswinds Mall are second-, third- and fourth- generation localites whose parents were and still are stalwarts at the Oak Park site which, like Old Man River, keeps rolling along. What would Gene's ancestors say about his now having a fax machine? . . . A what? . . . Don't try telling them how it works, they'll think you've gone batty .. . Hoa Kow will be delivering lunches by early part of September with many people ordering by fax. A Chinese restaurant with a five-piece rhythm 'n blues band? . . . C'mon now, that's going a bit too far . . . But it's true, folks . . . At West Bloom- field, Gene has "Orange Lake Drive" every Thursday even- ing through September, put- ting out a lot of foot-stomping music. Soon, both West Bloomfield and Oak Park will have iden- tical menus . . . Currently, each serve many of the same dishes . . . Crosswinds also has a separate appetizer menu which goes over big. Development of Chinese cooking itself is well over 4,000 years old . . . And whitefish as prepared by Hoa Kow today definitely had no part in it . . . However, Gene's ingenious methods of prepar- ing whitefish has people corn- ing from all parts of Michigan. His ancestors may not have eaten whitefish the way Gene prepares it or tasted such fine Chinese food, but one thing they can't deny . . . Another of their boys has made it big in the restaurant game. ONLY 400 people will be invited to the Oct. 1 opening of the George Burns Theater in Livonia . . . The black-tie event will include a cross sec- tion of local society honoring veteran actor George Burns, beginning with the theater's dedication followed by a lavish party at the Ritz Carlton Hotel, which also will sponsor him. He has been talk- ing it up big about a theater being named after him, with guest appearances on "Good Morning America" and the "Arsenio Hall Show." Following the appearance of George Burns and singer/ac- tress Florence Henderson, Oct. 2 and 3 (8 p.m. curtain), Stuart Gorelick is bringing in "Aspects of Love" by Andrew Lloyd Weber ("Phantom of the Opera") Oct. 9-25 .. . "Lettice and Lovage," starr- ing five-time Tony Award win- ner Julie Harris, comes in Jan. 18-25 . . . Anthony Quinn's pre-Broadway show, "Many Faces of Man," is set for April 1993 . . . Other musicals and stage shows are being planned by Stuart, head of Center Stage Produc- tions, which owns and operates the new George Burns Theater for the Perfor- ming Arts. He also has come up with a terrific incentive for all season ticket holders . . . They can go to the theater and pick out their own seats . . . Can't recall this ever being done before. K7
