In a large bowl, combine
chopped chicken, scallion
mixture, smoked chicken,
bread crumbs, cilantro, egg,
salt, cayenne and black pep-
per; mix until well blended.
Spoon mixture into prepared
pans, dividing evenly. Use a
flat metal spatula to smooth
tops, then cover with waxed
paper. Place loaf pans in large
pan with enough boiling
water to come halfway up
sides. Bake until set, about 35
minutes.
Remove pans from oven;
cool on wire rack. Invert and L
cut into 1/2-inch slices; serve
with salsa. Makes 2 terrines.
Serves 12 to 16. ❑

the JCC. This retreat, called
"Across a Lifetime," will ex-
plore Jewish spiritual legacy
and create contemporary
forms of Jewish expression.
Reb Zalman is a modern
day mystic and Kabbalist. He
is a professor emeritus at
Temple University, was or-
dained as a rabbi in 1947 and
received his doctorate in
1969.
