A Long Tradition Continues
In Beverly Hills And Farmington

ou've probably heard
the question asked
over and over again in
the time-old expression,
"What's in a name?"
Here's a solid case of where
the name is much more than
just a lot of superficial sub-
stance . . . where tradition is
written all over it with much
backup to go along.
The recent opening of Matt
Brady's second location at
Holiday Inn of Farmington
Hills, 10 Mile between Hag-
gery and Halsted, revives
many memories because the
son of James Patrick Brady is
involved with partners Susan
and Michael Fayne.
They called Matt Brady's
dad Diamond Jim Brady and
that's what his place was
named, opening in 1954 and
closing 1988 on W• Seven
Mile, east of the Lodge .. .
serving more hamburgers
and salads than anyone in the
area outside of the chains.
Diamond Jim passed on in
1970 but much of him still
lives on . . . His picture hangs

in both the first Matt Brady's

Tavern, which opened Febru-
ary 1990 on Southfield Road
just north of 13 Mile in Bever-
ly Hills, and at the second
locale in Farmington Hills .. .
Out of much respect for Jim,
the front doors at each place
also have cut glass to look
like a diamond.
Many people remember
Diamond Jim . . . Annie
Thomas wishes she had
known him . . . Annie started
as a grill cook 17 years ago
with Matt on Seven Mile and
is today kitchen administra-
tor at the Beverly Hills loca-
tion, plus doing her big bit in
helping to get the Holiday
Inn Farmington Hills spot
open . . . Jean MacNall at the
Beverly Hills site was a
bartender 13 years on W.
Seven Mile.
Murals were on the walls at
W. Seven Mile and caught
many an eye with the scenes
of Detroit landmarks.
The two Matt Brady's
Taverns have murals on the
walls and today also catch a
lot of looks with hand-painted
Detroit scenes . . . Each MBT
has many similarities with
even the square footage com-
ing close . . . 3,700 in Beverly
Hills and 4,000 in Farm-
ington Hills.
Matt Brady's number two is
a masterpiece of quality .. .
something extremely deman-
ding by Susan Fayne, whose

wonderful training program
has brought out the best in
her servers . . . And tell me
one dining spot where service
doesn't usually spell success
. . . This is the very backbone
by which a restaurant lives
. . . Too many restaurateurs
who didn't know better have
seen the hand of failure come
down in a heavy swoop.
The fact is more prevalent
today than ever before .. .
that a restaurant is only as
good as its employees . . . This
important factor is what will
help in no small measure
toward the ultimate chain of
Matt Brady's operations
sure to eventually be owned
by Susan and Michael Fayne
and Matt Brady.

Experienced people came
from everywhere to work at
the new Matt Brady's in Far-
mington Hills' Holiday Inn
. . . Julie Patterson, general
manager at both locations,
opened 10 restaurants for
Chuck Muer and was head
gal for years at Norm's Oyster
Bar . . . Jennifer Weeks, Far-
mington Hills manager, came
from Nifty Norman's . . . Judy
Mouhot, wearing a green
blouse and dark shirt, is
emblematic of the fine service
with her quick efficiency, per-
sonable ways and big smile
. . . She was at Pegasus
downtown, MacKinnon's and
Plymouth's fine Round Table
. . . Bartender Tracey Riddell
is from Mr. Joe's; Bill Wambi
was bartender at Townsend
Hotel's Rugby Grill; Donna
Ryan and Sherry Northern
came from Norm's Oyster Bar
. . . Karen Kubecki, days, and
Ken Fife, evenings, are from
Matt Brady's on Southfield,
coming originally to help
train and staying on board to
keep a flow of consistency
with the two Matt Brady's
Taverns.
Chef Randy Smola, with
the golden hands of culinary
expertise and ice carvings,
was at Radisson On The Lake.
Matt Brady's opened June
22 in the Holiday Inn Farm-
ington Hills and is a double-
threat operation . . . Not only
does it seat over 200 seven
days a week with full break-
fast, lunch and dinner menus
from 6:30 a.m. (Sunday-
Wednesday to midnight,
Thursday-Saturday 'til 2
a.m.), but the entire food ser-
vice and catering of Holiday
Inn Farmington Hills are in
its hands.
Diane Risko, outside sales,
is from 10 years of Roman
Terrace and recently Hotel
Baronette in Novi since it

opened, serving as confe:ence
service manager in charge of
catering; Kathy Keller, ban-
quet manager, is also from
Hotel Baronette and years
back was hostess and captain
in the Wicker Works restau-
rant at Northfield Hilton .. .
Chef Randy Smola was also
banquet chef when the Radis-
son Plaza opened in
Southfield.
To them, this is a snap .. .
and the Holiday Inn Farm-
ington Hills ballrooms'
capacities of 300 on down will
be perking with bar mitzvahs,
weddings, etc., where a world
of experience is a lot of suc-
cessful affair assurance .. .
Wouldn't it be some story if
somebody tossed a bar mitz-
vah there and only thing
served were Matt Brady's

legacy is growing
into a chain.

hamburgers? . . . Sure there's
more, a lot, but wow, wouldn't
that be something?
Custom menus are avail-
able, but the big feature
already is hamburger bars .. .
(naturally turkey burgers,
too) . . . for bar mitzvahs .. .
Quite a transition from ham-
burgers and turkey burgers to
elegant dining, but nothing
good ol' experience like this
can't handle.
Matt Brady's Tavern in
Holiday Inn Farmington Hills
is all mahagony with brass
poles, brass, stained and
beveled glass dividers bet-
ween booths, six television
sets, one eight-foot square .. .
a large square bar that com-
fortably seats 28 people and
has its own story to tell.
Atop that bar are 30,000
new 1992 pennies, all inlaid
hand-by-hand face up except
for six which have Abe Lin-
coln facing down (they stand
out as symbols of Susan,
Mike, Julie, Matt, head of the
restaurant's construction,
and one somebody either flip-
ped over just like that or goof-
ed) . . . Julie originally got
30,000 pennies and the night
before they were to be laid,
the wrong date was discov-
ered . . . all were 1991s .. .
Matt luckily was able to get
30,000 1992s the same night
and replaced the '91s.
The hand-painted murals
depict Detroit years ago and
today . . . Detroit Opera Co.
with J.L. Hudson Clothing on
the floors under it; city-
County Building, Fox
Theatre, Tiger Stadium,
