1 homemade pizza dough
shell
1 cup basic pizza sauce
6 slices ripe tomato
1 Tbsp. drained capers
12 imported black olives,
pitted
6 oz. can water-packed
tuna, drained and
flaked (or 6-8 oz.
fresh tuna, cut into 12
sliced, '4-inch thick
then into 2-inch
squares)
6 fresh basil leaves,
slivered
1 /2 tsp. freshly ground
pepper
extra-virgin olive oil
4 fresh basil leaves for
garnish
One hour before baking,
preheat the oven to 500°.
Lightly oil a pizza pan and
sprinkle with cornmeal. On a
well floured surface, press the
dough out to form a 12-inch
circle. Transfer it to the
prepared pan. Spread with
the pizza sauce leaving a
1 /2-inch rim. Lay the tomatoes
on top of the sauce. Sprinkle
with the capers and olives.
Arrange the tuna evenly over
the pizza. Sprinkle with sli-
vered basil and black pepper.
Drizzle lightly with some
olive oil. Bake until tuna is
cooked and crust is golden
brown — about 15-20 min-
utes. Garnish with whole
basil leaves before serving.
Serves 2 3.

EXTRAS PIZZA TIPS...
Don't forget to use salsa or
refried beans as a base sauce
for Mexican pizzas. Pineapple
and green peppers can easily
create a Polynesian version
with a sweet and sour sauce.
Plum sauce can be used as a
Chinese base with a number
of stir-fry choices. Ratatouille
makes a wonderful pizza with
or without cheese.

are any leftovers in the
