And fast becoming the "in" accomplishment for males, is the culinary arts. Everything changes, even chicken soup! Thirty-five years ago my mother gave me four recipes to start my culi- nary emergency kit: chicken soup, roasted brisket, blintzes and a chocolate cake. The chicken was laden with bright yellow fat. The brisket was the fatty second-cut for taste and economy. An extra egg yolk in the cottage cheese blintzes make it "healthier." And a pound of butter was the minimum amount for any de- cent cake. Today we "skin the chicken" as well as remove the visible fat. An easy method for newlyweds is to carefully cut an opening in the skin and, with a clean dish towel held tightly in your hand, grasp hold of the skin and pull. Brisket is rarely used but the first-cut is to- day's preference, trimmed and laden with herbs and vege- tables. Cottage cheese blint- zes have been replaced with the non-fat type or vegetable fillings. A mixture of butter and margarine gives the 1990 chocolate cake a slightly dif- ferent flavor but a better fat ratio. My daughters have entered marriage with college de- grees, the same four recipes with health alterations, plus the technical instruction for steaming, woking, microwav- ing and an awareness of nutrition. Both their husbands are helpful and comfortable in the prepara- tion of food and terrific in the clean-up department. We've come a long, long way! 1990's CHICKEN SOUP One 2143 pound whole chicken, washed thoroughly (remove organs, visible fat and remove skin) 1 large whole onion, peeled, leaving some skin for color 1 clove garlic, peeled, cut in half 4 carrots, peeled, cut in 2-inch slices 3 stalks celery, leaves removed, cut in 2-inch slices 1 large sweet potato or yam, peeled and cut in quarters 1 parsnip or parsley root, peeled (optional) 1 gauze bag or cheese cloth wrap containing: 1 teaspoon dried thyme, 4-5 whole peppercorns and 2 bay leaves Salt to taste Water to cover fresh parsley to taste fresh dill to taste (optional) Prepare chicken, vegetables and seasoning for cooking. Fill a large stockpot with enough cold water to cover chicken, onion and garlic. Over medium-high tempera- ture, cook soup until it starts to softly boil, reduce temper- ature to low and skim with a spoon any residue (scum) or visible fat from the top of the soup.
