Farmington Hills 851-3883 Fruit Flavors Abound In Spring Cookies Just as fragrant spices and the hearty flavors of caramel and apples are tied to the memory of fall leaves and the first hint of frosty days, so delicate fruit flavors and pastel tones are harbingers of spring. Contemporary lifestyles seem to lend themselves to nibbling a cookie on the run. As the weather gets warmer, cookies become more of a boon to the cook, since they require just a short time for the oven to be heating the kit- chen. And with such favorites as Lemon Bars and Festive Fruit Bars, the time it takes to make a pan of cookies is less than it would take to go to your favorite bakery to pur- chase them. LEMON BARS Base 2 cups all-purpose flour 1 /2 cup confectioner's sugar (sift if lumpy) 1 cup vegetable shortening Filling 4 eggs, lightly beaten Grated peel of one lemon 6 tablespoons lemon juice 11/2 cups granulated sugar 1 /4 cup all-purpose flour 1 teaspoon baking powder Confectioner's sugar 1. Heat oven to 350 degrees F. Grease 13x9x2-inch pan with shortening. 2. For base, combine flour, confectioner's sugar and shortening. Mix until fine crumbs form. Pat firmly into pan. Bake at 350 degrees F. for 20 minutes. 3. For filling, combine eggs, lemon peel, lemon juice, granulated sugar, flour and baking powder. Spread over baked base. Bake at 350 degrees F. for 25 minutes. Cool. Sprinkle with confec- tioner's sugar. Cut into 48 bars. COCONUT BON BONS Centers 1 /4 cup vegetable shortening 2 cups confectioner's sugar (sift if lumpy) 3 cups flaked coconut 1/8 teaspoon salt 1 /4 cup coffee cream 1/2 teaspoon vanilla Coating 3 /4 to 1 pound white "chocolate" confectioner's coating 2 tablespoons vegetable shortening 1. For centers, line baking sheet with waxed paper. 2. Melt shortening in medium saucepan. Stir in sugar. Chop coconut (use blender or food processor). Add along with salt, cream and vanilla. Cool to room temperature. Roll into balls about one inch in diameter. Place on baking sheet. Chill 30 minutes or longer. 3. For coating, combine white "chocolate" and shortening in small sauce- pan. Cook and stir on low heat until melted and smooth. 4. Dip chilled centers in coating to cover completely. Let excess coating drip back into pan. Place candies on waxed paper on cooling racks. Let harden slightly. Dip a se- cond time for heavier coating. Store in refrigerator. 3 Dozen candies. Notes: 1. Coating may be tinted if desired. Two to 4 drops food color gives a pastel tint to 1/2 cup coating. 2. If white "chocolate" is not available, use one package (12 ounces) semi-sweet chocolate pieces. 3. For optimum flavor and texture, let stand at room temperature about 30 minutes before serving. 4. During the dipping pro- cess, if coating in pan becomes too firm, it may be reheated. ( FESTIVE FRUIT BARS Crust 11/2 cups all-purpose flour 11/2 cups quick oats (not instant or old-fashioned) 1/2 cup firmly packed brown sugar 1/2 teaspoon baking soda 3 /4 cup vegetable shortening 2 tablespoons water 1 cup apricot preserves Drizzle (Optional) 3 /4 cup confectioner's sugar 1 tablespoon plus 1/2 teaspoon milk 1 /4 teaspoon vanilla 1. Heat oven to 375 degrees F. 2. For crust, combine flour, oats, brown sugar and baking soda. Cut in shortening until 7/\
