Cover and simmer, 35 minutes for lamb, 15 minutes for chicken. Spoon dried fruits over plus 3/4 cup of the orange juice. Bring to sim- mer. Cover and cook 15 minutes longer or until meat is tender. If too liquidy, reduce by boiling briskly, uncovered, for 5 minutes. Sprinkle pistachios over to garnish. Serves 8 to 10. YELLOW AND GREEN ZUCCHINI SAUTEED WITH SAGE 1 pound small green zucchini 1 pound small yellow zucchini 2 tablespoons margarine 2 tablespoons fresh sage leaves or 2 teaspoons dried 1/8 teaspoon red pepper flakes 2 tablespoons cider vinegar salt to taste Slice zucchini into Y4-inch thick rounds. Melt margarine in 12-inch skillet over medium heat. Add zucchini, sage and pepper and stir to coat zucchini evenly with margarine. Cook until zuc- chini is browned at edges and tender, 6 to 8 minutes, stirr- ing often. Stir in vinegar, season to taste and serve hot. Serves 8. STRAWBERRY-STAR FRUIT TART The brownie recipe, used here as the tart base, is adapted from Norene Gilletz's✓ Microwave Bible (Warner Books, 1991). Brownie Crust: 1 cup sugar 1/2 cup oil 2 eggs Y2 cup unsweetened cocoa 1/2 cup matzah cake meal 1 tablespoon potato starch 1 tablespoon orange juice 1/2 cup chopped nuts Orange Filling: 2 eggs 3 tablespoons frozen orange juice concentrate 1 tablespoon honey 4 tablespoons margarine, melted Topping: 2 pints ripe, red strawberries, hulled 2 star fruit (carambola) thinly sliced 1 /4 cup currant jelly, melted Line bottom of 9 or 10-inch non-metal pie dish with wax paper. Prepare crust: In small bowl of electric mixer or food processor, beat sugar, oil and eggs until light, about 1 minute. Add cocoa, matzah cake meal, potato starch, orange juice and nuts and mix to blend. Spread mixture into prepared pan, pushing slightly higher around edges. Let sit for 5 minutes. Place an inverted , pie dish in microwave oven and set cake pan on top.-Bake at High for 4 minutes. Cool. Spread with Orange Filling. Arrange star fruit slices in circle around edge of dish. Fill in center with strawberries, pointed end up. Brush lightly with melted currant jelly. Serves 10. To Make Orange Filling: Whisk eggs, honey and orange juice concentrate in blender or processor until creamy, about 20 seconds. With motor running, pour melted margarine through feed tube and blend thoroughly. Transfer to small saucepan and heat over medium heat, whisking con- stantly, until thickened, 3 to 4 minutes.
