In food processor, place
apricots, dates, figs, ginger,
coriander, and cayenne pep-
per and chop finely. Add wine
and process 5-10 seconds to
blend. Chill. Shape into
1-inch balls and roll in
toasted sesame seeds. Makes
12 to 15.
To toast sesame seeds:
Spread on tray of toaster oven
and toast until lightly brown,
1 to 2 minutes. Watch careful-
ly to avoid scorching.
FRIED FISH PIECES
WITH LEMON-
CILANTRO SALSA
1 /2 cup matzah meal
1 /2 teaspoon salt
1 teaspoon paprika
11/2 pounds white fish
fillet (e.g. perch or
orange roughy)
1 egg, lightly beaten
oil for frying
In shallow dish, combine
matzah meal, salt and
paprika. Set aside. Wash fish
and pat dry. Cut into 1 1/2-inch
pieces. Dip pieces first in egg,
then toss in matzah meal
mixture. Pour oil, about
1 /4-inch deep into large non-
stick skillet and heat. Fry fish
pieces over medium heat un-
til nicely browned, about 3
minutes on each side. Drain
on paper towels. Serve on a
bed of lettuce. Pass Lemon-
Cilantro Salsa. Serves 8.

1 /4 lemon, unpeeled,

1 hard-cooked egg,
quartered
