In large non-metal bowl,
lightly stir together tomatoes,
cucumber, lettuce, yellow pep-
per, carrot, olives and
`greenies.' In cup or small
bowl, whisk together lemon
juice, oils, garlic and cor-
iander. Pour over vegetables
and toss. Season to taste with
salt and pepper. Serves 4 to 6.

TAL TURKEY SPECIAL
(from Tal Hotel)
2 tablespoons olive oil
% cup mushrooms,
thickly sliced
% cucumber, unpeeled
and diced
1 cup zucchini, unpeeled
and diced
2 green onions, coarsely
chopped
1 carrot, grated coarsely
1 /4 pound smoked turkey,
cut in thin strips
2 fried eggs, as you like
them
2 pita bread

Heat oil in medium skillet,
preferably non-stick. Add
mushrooms and fry over high
heat for 30 seconds to brown.
Lower heat to medium and
stir in cucumber, zucchini,
onions, carrot and turkey.
Saute 2 to 3 minutes until
vegetables have lost their raw
look. Spoon mixture into pita
bread and top each with hot
fried egg. Makes 2.
Note: Cooked flaked fish
such as salmon or tuna may
be substituted for turkey.

SABRA SALAD WITH
CITRUS VINAIGRETTE
1 large ripe avocado,
peeled and diced
juice of 1 /2 lemon
% sweet red pepper,

seeded and diced
2 oranges, peeled and cut
in segments
1 grapefruit, peeled and
cut in segments
1 bulb chicory, separated
into leaves

Place avocado in small bowl
and pour lemon juice over.
Toss lightly (Lemon juice
prevents discoloration.) Stir
in red pepper and set aside.
Place chicory leaves on a
salad platter, narrow ends to
center. Arrange orange and
grapefruit sections attractive-
ly on top. Spoon avocado mix-
ture in center of dish and driz-
zle with Citrus Vinaigrette.
Serves 4.

CITRUS VINAIGRETTE
2 tablespoons olive oil
% cup orange juice
1 tablespoon chopped
fresh mint or 1
teaspoon dried
1 /4 teaspoon salt

In small bowl, whisk olive
oil, orange juice, mint and
salt. Use at room
temperature.

BAMIA (okra in spicy

tomato sauce)
1-10 oz. package frozen
okra
1 tablespoon olive oil
1 onion, thinly sliced
16-oz. can chunky tomato
sauce
1 teaspoon chopped
garlic
juice and grated rind of%
lemon
scant 1/8 teaspoon red
pepper flakes
1 teaspoon salt

Partially defrost okra and
drain off any liquid. Heat oil
in non-stick 2 1/2 quart
saucepan. Add onion and fry
until golden. Add okra,
tomato sauce, garlic, lemon
juice and grated rind, red pep-
per flakes and salt. Mix and
simmer for 20 minutes, stirr-
ing often. Serve warm or at
room temperature. Serves 4 to
6

SHAKSHOUKA (eggs in
a savory tomato-pepper
sauce)
3 tablespoons vegetable
oil
2 medium onions,
coarsely chopped
2 tablespoons prepared
chopped garlic
3-4 tomatoes, chopped
1 green bell pepper,
seeded and chopped
3 /4 cup vegetable stock
4 tablespoons tomato
paste
1 /4 teaspoon Tabasco
sauce
8 pitted green olives,
quartered
